Imperial Stout brewed with Chocolate and Coffee, aged in Maple Syrup-Bourbon Barrels.

CBS was born when we stumbled upon some bourbon barrels that had previously housed maple syrup. We opted to put the same base beer as KBS, an imperialized version of Breakfast Stout, in the maple barrels and, after one taste, we knew we had something special. Rich maple syrup, roasted coffee and velvety chocolate meld together in what can only be described as a transcendental drinking experience.

God damn. When I showed up and read the tap list for the day, this was the beer I was looking forward to the most. It may have hurt it that it was the last beer I drank after a long day, but I don’t know. I’d like to try it again. This was lacking in maple notes in either the aroma or the flavor. Really just a lot like the Kentucky Breakfast, which I don’t like as much as the regular breakfast; it isn’t really a beer too well suited for aging. There is a strong, astringent, coffee press aroma, no maple just bitter roast. Flavor has lost all character to coffee, oxidation, and boozy barrel. Totally lifeless. A big disappointment.

RATING #100(!): I was saving this rating for something truly special... Well I found it (and lots of others) @ Three Floyds DLD ’09. This is a special tap-only version of Founder’s Kentucky Breakfast Stout aged in Maple wood barrels. Every bit as delious as the regular KBS - smooth, sweet, sticky, coffee, chocolate, and bourbon - plus a woody, earthiness that lends a lingering aftertaste of maple, vanilla, and a little smokiness. Damn close to a 5 star beer!

Tap at DLD. Pours a black color with a tan head. Aroma is a great mix of coffee, chocolate, roast and maple syrup. The flavor is a tad sweeter than I would have expected but I loved it!!! Maple, coffee, chocolate, vanilla, and the alcohol is hidden in this brew!!

On tap at DLD. This poured a deep, dark brown with a nice, lasting head of dark tan foam. The aroma was loaded with freshly ground coffee, heavy roasted notes, and also a subtle sweetness of maple syrup. The flavor was also heavy on the coffee, just like the regular Breakfast Stout. Complimenting this was a smooth maple sweetness. The coffee and chocolate are so bold, that the maple really adds some nice depth and contrast. The mouthfeel was full-bodied and had light carbonation. Slightly sticky. Another winner from Founders.

On tap at DLD ’09. Rating 900. How cool is it that I was double fisting VB Dark Lord and CBS? Very cool, that’s how. Pours an opaque brown with a nice dark brown head. Nose a ton of coffee, vanilla and nice maple syrup. In tasting, I get again, a big ol’ cup of coffee with chocolate, salt, maple notes. I don’t find the maple as strong as most others. It is a fantastic beer with a nice multitude of flavors that would be great if they’d bottle this stuff up. The maple this is in here is a pure maple flavor, not syrup. Clean, floral and fantastic. Excellent.

On tap at DLD 09. Pours black with a thick brown head. Aroma is of roasted malt, bourbon, chocolate, sugar, vanilla, and maple syrup. Taste is of roasted malt, bourbon, bitter chocolate, vanilla, and coffee. There is a big presence of the maple syrup in this beer. It blends well with all the other flavors, which is very surprising. Lingering taste of bourbon and vanilla. Surprisingly, it was not overly sugary, which was a damned good thing. Mouthfeel was thick, but not syrupy. The alcohol presence is very well masked.

Tap at the 2009 Founders Black Party. Only the 2nd beer I’ve ever given a perfect rating to. This stuff is incredible! Black as black can be pour with a nice dense brown head. Notes of oak, vanilla, bourbon, maple sugar candy, and nuts. All in excellent balance. Thick oily mouthfeel.

The first brew I ordered when the Black Party specials started flowing,and one of the surprises of the night,rich more chocolate then coffee aroma,which just the slightest hint of that maple,taste was hard to recognize as Breakfast Stout,had a rich ,smooth malty,creamy flavor,with the maple now much more noticable then in the aroma,coffee again not as evident,a slight smoke and tobbacco character,a sweetness from the maple finished it off. Talked about and praised at our table for a long time

Wow, this is one beautiful beer. Body and appearance similar to BS and KBS, but the slight maple sweetness and aroma are a perfect addition. I hope they decide to bottle this. A unique beer that is wonderfully done.

On tap at founders. Opaque black with medium, creamy tan head. Big bourbon aroma, vanilla, cherry, sweet roast, coffee, tobacco. Sweet, coffee, bourbon, roast, an actual maple syrup presence not unlike barley wine, chocolate, slight alc that is not overehelmitastying. Medium to thin with light carbonation. Sweeter, but darn good.
