COMMERCIAL DESCRIPTION
Imperial Stout brewed with Chocolate and Coffee, aged in Maple Syrup-Bourbon Barrels.

CBS was born when we stumbled upon some bourbon barrels that had previously housed maple syrup. We opted to put the same base beer as KBS, an imperialized version of Breakfast Stout, in the maple barrels and, after one taste, we knew we had something special. Rich maple syrup, roasted coffee and velvety chocolate meld together in what can only be described as a transcendental drinking experience.

Shared imported bottle at Olut Sabadell. Pitch black with vanilla head. Chocolate and vanilla aromas, but more sweet aroma in the background. Very chocolateish and sweet. Very well balanced, very easy to drink.

Maple syrup, dark chocolate, cacao, sweet, dark roast coffee, dark, toasted malts, soft carbonation, full bodied. Outstanding Impy, rich and complex, yet very drinkable, well-balanced. Pours black with low deep tan head. Aroma of coffee, chocolate, light vanilla and bourbon, maple syrup. Taste is super smooth, super sweet, chocolate, vanilla and a substantial yet not overbearing amount of maple syrup in the finish. Rich, smooth, creamy body, light stickiness, soft carbonation.

Bottle. Thick black pour with a medium sized creamy light brown head with good retention, lace and regeneration. The aroma is fairly mild with white chocolate, roasted malt, vanilla, light bourbon and sugar. The flavour has white wood, bourbon, sugar, roasted malt, dark chocolate. Full body, super smooth with soft carbonation, filling sweetness and balanced bitterness and alcohol. Long warming finish with bourbon and chocolate. Great!

(On tap @ Birreria Volo, Toronto, Jan 20/18) Pours pitch black with a small frothy medium tan head and spotty lace. Notes of rich chocolately malt, earth, soft coffee, balanced bourbon, moderate roast, robust oak, soft notes of vanilla and a touch of coconut, fairly sweet but not too much, like semi-sweet chocolate really. Maple-soaked feel to the whole thing, but not drowning in it by any means, just nicely infused. Maple is slightly more prominent in the finish, but there's lots of dry chocolate, coffee and woody notes to balance. Nice long aftertaste, with limited alcohol heat. Mouthfeel is medium-full, slightly syrupy, softly carbonated. Really nice stuff, wasn't sure how it would handle the hype as a big batch but Founders still knows how to make an excellent stout.
