Our Hop Knot IPA is made only from American malt and lots of American hops, which produce a big, broad-shouldered, hoppy beer backed up by a character as warm as, well, Mom and apple pie Hop Knot IPA get its peculiar name from the weaving of four different hops added at four separate times during the brewing process. Including our cavernous hop-back, which gets so stuffed with whole leaf hops that we feel genuine guilt for its excess. Hop Knot is an ale that is to be enjoyed with friends, spicy food or any time you need a good hop fix without the harsh bitterness. We hope you enjoy this pioneering beer made in the bold spirit of Americans everywhere.

Rating #1504 - 16.03.2015 - Draught at Four Peaks in Phoenix Airport - Pours a golden amber with a rich creamy eggshell head. Aroma is grapefruit, orange peel. More citrus sweetness, pithy lemon rind bitterness, light sour, assertive bitter finish. Medium-strong body, but quite crushable at 6.7%.

Good. Clear golden pour. Aroma is sweet lemon rind with a taste that follows. First thought was tame lemon head.

Glassy, chill-hazed, deep golden with light amber tints. White head atop is large and well-retained.
Nose actually seemed a bit ominous for me. I mostly got a lot of orange rind, grapefruit and light pine with some caramel and biscuit character. It all seemed to suggest I was in for an East Coast style IPA from the early 2000s. Not to mention, even trying to vigorously warm the beer up, and swirl it to concentrate the aroma, I didnt get a ton. Clean, though and with no alcohol noted.
The flavor, then, is quite confounding. Almost none of the heavy citrus or caramel promised from the nose. Rather, a dextrinous body that mostly allows for just light honey and at most some dry toffee character from the malt. The hops give off a very slow building dankness, with earthy notes, juicy, light tropical fruits and little to no pine whatsoever. The malt stays out of the way and the leafy, fresh, dank hops provide a very easygoing yet flavorful beer that belies both the aroma and the abv. Continued to evolve and build complexity/flavor as it warmed and breathed. Will certainly revisit this one, but was very impressed based on this pint.

Can. Didnt seem overly fresh. Much more subdued than the obviously fresher impy. Just an average brew as drank.
