American Wild Ale.
Rarely released in its purest form, Ananke is the backbone of our wild ale program, a base beer used for blending and fruit infusion. Named for the ancient Greek Goddess of inevitability and personification of destiny, necessity & fate, Ananke helps bring order to an otherwise chaotic universe. Such as her namesake, this delicately sour ales presence is felt throughout all of our barrel-aged beers. Ingredients: Pilsen & acidulated malts; raw wheat; flaked rye; Perle hops; top-fermenting yeast; wild yeast & bacteria; natural, limestone-filtered, Edwards Aquifer H2O; love

Poured from a 2013 vintage 22 oz bottle. Aroma is fairly mellow. Light acidity and citrus notes. Medium light white wine characteristics with hints of oak. Light grain notes. Hints of pineapple and stone fruit. Pours a hazy, pale golden straw color with a medium sized, medium thin, white head that recedes steadily to the edges where it lingers for a bit. Faint lacing and no legs. Flavor has a medium light acidity that isnt harsh at all. Some light sweetness with light grain notes. Acidity is displayed through lemon notes as well as some light pineapple. Light white wine notes with faint oak. Hints of golden raisins and stone fruit. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice sour beer though its character is very light. Easy drinking and definitely a nice base for fruit or blending.

Bottle @ Steve_0s house. Thanks! Pours a slightly hazy yellow orange appearance with a white head. Aroma is cheese curds / aged parmesan, lemon, funk, and lactic acid. Soft sourness in the mouth. Some tropical and citrus fruit in the mount along with some more cheese / lactic acid notes. The aroma seemed a little aggressive for me but the flavor was enjoyable enough. Low sweetness and bitterness. Not bad.

Bottle @ Travlrs Satellite 10k Shindig. Cheers to the shit heel of beerbro who brought this along. Hazy gold pour with a modest white head. Musty white grape, honeycomb. Mellow lemon meat. Taste is moderately acetic and sharp. Sort of toasty wheatiness. Sour patch candies. Light body, moderate carbonation. Decent.

Bottle: Cloudy, pale straw-yellow body with a foamy, slightly soapy white head that reduces to a bubbly collar in no-time. Aroma of sweaty funk, brettanomyces, sour lemon, mild acetic acid, lightly vinous white grapes, stone fruit skin sharpness, musty hay, & some sweaty feet. Sour, funky. Flavor has a lovely sweet-tart & lemony sourness up front; lacto yeast, brett, horsey funk, underripe stone fruits, white grapes. Some dripping wet oak towards the back-end; finishing with a strong, nearly puckering sourness & a lingering bit of lemons, barnyard, & sweaty hay. Smooth, crisp mouth feel. Wow! What an awesome sour ale.

Bottle: The aroma consists of moderate citrus, brett, sweet tarts, light lemon, and a touch of vinous notes. It pours a mostly transparent golden-orange with a touch of haze and a small white head that quickly fades to a minimal film. The flavor starts with moderate tart citrus. The finish has moderate tart lemon, light sweet tarts, brett, and very faint white. Its light bodied with light-moderate carbonation. Overall, super tasty and something I could drink all day.

Bottle shared during the satellite Travlr 10K tasting at CBC Clerkenwell - London. Pours unclear yellow-gold with a foamy white head. The aroma holds rich lemon, light funk, popcorn, sweat. Light sweet flavor with bracing tart lemons, white pepper, cereal, pale wood. Light bodied with average, spritzy carbonation. Strongly acidic on the finish with cleansing lemon, soft funky edges, light bitter straw. Bracing and a bit burning with the high acidity. A bit rough around the edges and perhaps a touch young. Fair overall.

Bottle, shared at the satellite 10K tasting CBC Clerko, 19/08/14. Hazed orange golden with a decent off white head that dissipates then retains. Nose is tangy citric rinds, lemon peel, funky vibes, tarte peach, straw, mellow dank wood. Taste comprises tarte melon, dank wood vibes, funk, light barnyard, mandarin, tangy apricot, tropical fruit notes. Medium bodied, fine carbonation, tangy fruit rinse in the close. Nice sour, fairly easy drinking.
