American Wild Ale.
Rarely released in its purest form, Ananke is the backbone of our wild ale program, a base beer used for blending and fruit infusion. Named for the ancient Greek Goddess of inevitability and personification of destiny, necessity & fate, Ananke helps bring order to an otherwise chaotic universe. Such as her namesake, this delicately sour ale’s presence is felt throughout all of our barrel-aged beers. Ingredients: Pilsen & acidulated malts; raw wheat; flaked rye; Perle hops; top-fermenting yeast; wild yeast & bacteria; natural, limestone-filtered, Edwards Aquifer H2O; love

12 fl oz bottle. Pours hazy orange with a small white head. Aroma is citrusy, barnyard and brett. Sweet, fruity and dry to peppery brett. Mild citric to light acidic. Lingering fruity and brett finish.

Bottled. A hazy yellow beer with a thin white head. The aroma has notes of wood, brettanomyces, and malt. The flavor is sweet and sour with notes of brettanomyces, wood, malt, and lemons. The body is light.

Medium body, yeasty with some medicinal notes and a sophisticated Chardonnay-like tartness. Strange cardamom notes. Baking yeast. Interesting, but clearly an "inexperienced " Sour. 150311

Bottle shared during the satellite Travlr 10K tasting at CBC Clerkenwell - London. Pours unclear yellow-gold with a foamy white head. The aroma holds rich lemon, light funk, popcorn, sweat. Light sweet flavor with bracing tart lemons, white pepper, cereal, pale wood. Light bodied with average, spritzy carbonation. Strongly acidic on the finish with cleansing lemon, soft funky edges, light bitter straw. Bracing and a bit burning with the high acidity. A bit rough around the edges and perhaps a touch young. Fair overall.

Bottle, shared at the satellite 10K tasting CBC Clerko, 19/08/14. Hazed orange golden with a decent off white head that dissipates then retains. Nose is tangy citric rinds, lemon peel, funky vibes, tarte peach, straw, mellow dank wood. Taste comprises tarte melon, dank wood vibes, funk, light barnyard, mandarin, tangy apricot, tropical fruit notes. Medium bodied, fine carbonation, tangy fruit rinse in the close. Nice sour, fairly easy drinking.

UPDATED: JAN 28, 2011 Bottle thanks to Tim. Pours cloudy golden apricot. Nose of grape skin, apricot seed, sweet and tart fruits, and musky basement aromas. Taste is apple core, mildly sweet apricot and grape skin followed by tart fermented kiwi and yeast. Very nice well balanced brew.

A: The pour is a clear golden straw color with a thin ring of white foam. S: Pretty decent tartness to the nose to go with a nice little funky character. There’s still some malt character to it, but also what seems to be some white grapes. I get somewhat of a lemon-lime soda smell and a lot of CO2. T: There’s a quick bit of lactic acidity on the front end. Seems to be some white grapes, lemon, and green apples. The malt/bread flavor is there also. Pretty simple on the flavor, but it is nice. M: The body is medium with a moderate to high carbonation. D: A pretty decent sour, especially for a first attempt from Freetail. I would be interested to see how this beer ends up aging.

Cool bottle from ericandersnavy. Pours hazy gold with a frothy white head. Nice sour, pehaps even barnyard, aroma. Medium body with sharpish carbonation. Flavor? I call barnyard. And citrus? And a familiar flavor I can’t name. It’s lightly astringent, and seems to have oak character. Wine? Maybe that’s the familiar flavor? A BA sour that’s not apparently the same as any others I can recall. Nice.
