Celebrating the first year of Freetail’s existence, One explores the uncharted dark-side of Belgian-style witbier. Based on an old homebrew by Assistant Brewer John Lee and brewery friend Reimy Roberts, the One uses 4 types of wheat (malted, raw, terrified and roasted) and is spiced with healthy doses of orange peel and coriander and fermented with 100 lbs of native Texas Brush honey from Fein’s Honey in Llano, TX. A delightful Black Wit that, to our knowledge, has never been attempted before commercially.

Bottle thanks to Tom. Pours a cloudy brown with small beige head. The aroma is citrus and hairspray. Thin mouth, acetone, roast, tastes off. But still glad to finally try.

On tap at the brewpub. Deep brown and hazy with a decent sized cream colored head. Aroma of wheat, yeast, light banana, coriander. Taste is of wheat husks, leather, light soap, wheat, and caramel.

On tap at Freetail. Black pour with a small brown head. Smells of clove, banana, and windex. Tastes like old crap, banana, and must.

Tap. A muddy color beer with almost no head(it looks like it got scooped up at the edge of a muddy lake). An aroma of wheat, & citrus as is the taste with a off putting taste at the end. The only beer I haven’t like from Freetail.

( 22oz bottle) Pours clear brown with light film of head. Nose of honey, wheat, coriander and florals. Taste of alcohol, wheat, spices, gingerbread, and molasses. A little watery but good finish.

Pours a nice looking dark brown with a tannish head. Very low carbonation. Aroma is Belgian yeast with some toasted malt and some caramel malt. Maybe a little citrus fruit, but it is very well hidden if it is there. The flavor is similar to the aroma with a little citrus, some caramel and roasted malts as well as alcohol. Very drinkable.

bottle thanks to thirdeye11. poured dark brown with a white head. aroma was dark roast, coffee, alcohol, chocolate, and a fruity bitterness. flavor was alcoholic bitter, a weird bitter, odd. light body with medium carbonation. i couldnt really place this beer.

On tap at the brewpub. The look is dark, brown in color, thin off white head, and nice. The smell is sweet, honey, fruits, heavy wheat, and yeast. The taste is sweet, fruits, wheat, dark fruits, and honey.
