This year’s brew is our tribute to the mystery and variety of Mexico’s most famous cuisine—mole. Combining ingredients from several traditional recipes, we have concocted a beer that reflects the subtle harmony of flavors in a unique way. Raisins, whole spices (cinnamon, cumin), piloncillo sugar, dried chiles (guajillo, arbol, ancho), roasted almonds and pumpkin seeds all combine with deep chocolate overtones to create a complex brew reflecting our love for this Mexican dish.

Bottle thanks to Tim. Pours dark brown with tan head. Nose and taste of cinnamon, light chili pepper, chocolate, rum raisin, roasted pumpkin seed, toasted almonds and cumin powder. A bit spicy in the finish. Nice complexity. Medium body. Solid beer for the style.

From notes. Tasted on 10/21/12 from a capped bottle. Pours opaque dark brown with an average tan head that leaves smooth, average lace. The nose is a bit earthy with plenty of spices and very dry, toasted cocoa nibs. The flavor is salty up front, moving to the bitterness from toasted nibs and spices, and finishing with spicy chili. The body is medium with average carbonation and a long spicy cocoa finish.

Oy! I was hoping that this would possibly mellow and age well, but afraid it became infected and thwarted that hope. Both bottles I had were gushers and any attempt to pull flavors through the cacophony were futile. *SIGH* (And I do like these guys and have enjoyed many of their beers)

Bottle... Clear dark brown ale with no head. The aroma furnishes earthy notes, chili pepper and cocoa. Medium to full-bodied with relaxed carbonation. The flavor presents mild saltiness and slight chili pepper warmth. Finishes lightly salty and a touch warming. Bottle courtesy of 50belair!

TheAlum (7164) - Aurora, Illinois, USA - OCT 20, 2013
22 oz bottle acquired via trade long ago. Opened at Cellar Kill Night. Pours a nice deep brownish red pour, well hazed with frothy offwhite head. A bit of a slow gush leads to a decent ring, laces small. Deeper dark glow shows some nice darkness, copper and reddish. Aromas show some carmelized malt meeting red cherries, a bit tannic and firmly tart. Some cocoa, gentle spice, and brown malt. A bit toasty and biscuity, some mellow cocoa. A bit soured though overall. Initial is a bit tart, well carbonated with some gentle cherry, more carmelized and toasty malts, some oak like presence. A bit of cocoa, toast, and roast. Some dryness, more oak, and some toffee and carmelized malt. Decent tartness, red wine and cherries, a bit tannic. Some more Balsamic on the nose is more gentle, a bit fuzzy into the backend. Dry, a bit tannic and lactic. Combines in odds ways with the toast/carmelized/brown malt presence, a bit of cocoa. That gentle bit of spice and pepper, mellow earth, spice of pepper is mellow as it hits the back of the palate, almost covered up by the dryness and toast, tartness that hits at times. Finish is a bit toasty, carmelized, and balsamic, bits of cocoa, pepper, and carbonated. Carmelized, a bit nutty and odd. At times it’s nice, at other times its a bit disjointed. Some time to breathe certainly makes the peppers come out a lot more. Interesting.

Bottle. GUSHER... Clear brown pour with a huge off white head. Sourish dark fruit aromas. Taste like a babies diaper filled with Indian food.....

Bomber from a BA trade. Dark brown pour with quite a bit of gushing to it, and a slightly dusky look. Nose is vaguely dusty and spicy, with rich chocolate malts forming the base. Loads of brown sugar in the taste, in some places undercutting the distinctiveness of the mole character. Spicy with a bit of dark fruit, in places the beer appeals but elsewhere tends to dissolve into a green chile mess with excess sugar.

Boutip (6432) - Gatineau, Quebec, CANADA - MAR 11, 2013
Bottle: Poured a clear brown color ale with a large foamy head with good retention and minimal lacing. Aroma consists of chocolate malt notes with some cinnamon and some pepper notes thought no heat is discernable. Taste is a mix between some cinnamon and chocolate malt with light nutty flavour and some pepper notes are also discernable though well balanced in the whole mix. Body is about average with good carbonation and no apparent alcohol. Not bad but I guess the pepper notes in beer is not something that I am really seeking out.

Pretty much what Mora2000 said... A big gusher of beer as soon as its opened. Thankfully I opened this up in the kitchen so it was a very small mess. Amber brown in color. Slight nutty aroma with a spicy peppery note as well. More nuttiness in the flavor. Some cocoa and chile heat in the aftertaste. Overall, not too bad. I wish a third of it wasnt wasted due to over carbing.

Big time gusher when opened, with brown foam going everywhere. Once calmed down, the beer pours a brown color with a brown head. Unfortunately, this beer smells very infected. I get a lot of dark fruit notes in the aroma. The flavor is also infected. I get some dark fruit, cherry, and a hint of chocolate. Medium mouthfeel and high carbonation. I shouldn’t be surprised since almost every bottle I have gotten from Freetail has been infected, but I was very disappointed since this beer sounded like it had the potential to be very good.
