Forager Series.
Persimmon (Diospyros Virginiana) — literally, “fruit of the gods.” Sweet and savory, with natural notes of cinnamon and apricot, the orange-globed persimmon fruit truly is heavenly. But it’s not until after the first frost that persimmon turns from astringent and bitter to a luscious fruit worthy of the gods.
Once again, the annual wild persimmon harvest was amazing. The Forager community gathered over 550 pounds of native North Carolina persimmons, a harvest that began in September 2013 — well before the first frost. This bountiful yield produced a complex, fruit- forward winter ale. The beer’s notes of holiday spices come entirely from the native persimmon and the beer’s Belgian ale yeast.
In the fall of 2014, we’ll debut a brandy barrel-aged version.

Persimmon flavors bring out some tasty notes, heavy malt backbone, warming alcohol is a good thing

Pours translucent orange-honey with a nice pale.buff head. Aroma delivers persimmon, fresh malt and other fruit. Flavor nicely echoes the aroma but with emphasis on the fruit. Mouthfeel presents good body and fizz. Go full steam!

2012-2013 versus 2014-2015 side by side at Catch 22 bottle share. Pours a hazy golden orange with bubbly off-white head that leaves light lace. Aroma and taste of light fruity notes, big malty sweetness, and a hint of spicy esters. Booze is well hidden, otherwise a but unexciting. The older one just tasted more oxidized.

Pours a golden amber color with minimal fizzy head. Aromas of sweet malt and light fruit. Flavors of caramel malts, maybe a touch of fruit and some alcohol heat.

Pours a murky reddish copper color, with a thick beige head with spotty lacing. Aroma is grain and caramel malt, some plum, a hint of apricots and the persimmon. Taste is medium bodied, soft carbonation with flavors of light fruit, mult grain and caramel malts, some mild spice and a touch of candied cherries. Finish has a caramel malt, dark fruit and low bitterness. Alcohol is well hidden. Very nice well rounded brew. Likely the best thing Fullsteam has done to date!!

On tap at the brewery. Caramel coloring with a very big malty flavor and alcohol in the finish. Maybe the best thing I’ve had at Fullsteam.

Pours a nice amber color with thin light tan head and thin collar. Aroma is a light caramel, some fruity-tangy-berry-like notes. Now I think I know what persimmons smell and taste like. Really digging the fruity taste in this beer. Great medium body and carbonation lend to a great beer experience.

Bottle. Unique, earthy aroma with some hints of spices and fruit. Pours an opaque medium brown with thin, fine head. Medium/light body, lively mouthfeel. Nice earthy/apricot flavor and smooth finish (hint of licorice-like flavor in finish), with a alcohol warming sensation. Nice to have a winter seasonal that is lighter bodied and easy to drink.

Coppery orange-amber pour. Nose is a fruity mix of plum, raspberry, and citrus meat with sweet caramel. Flavor follows suit with more plum, orange, raspberry and yeasty spice. Somewhat sweet, but enticing. Lingering fruit mix.
