On tap at the brewery. Poured a hazy, bright golden-yellow color with a third-quarter inch white head that slowly faded to a thick layer and left some spotty lacing. Aroma is mostly doughy, dusty yeast with a peppery spiciness paired with a light rye maltiness and a faint hint of citrus. Smooth, moderately sweet entry with a moderate grainy rye maltiness paired with a lightly tart hint of lime that transitions into a dry, doughy yeastiness with the same peppery spice present in the nose that lingers into the finish where it is paired with a faint hint of earthy hops. Moderate carbonation and crisp, dry mouth feel that makes it inviting to drink, even though the flavor isn’t spectacular. Overall, it was solid and very inviting to drink. It seemed a tad unrefined and like mj said, the lime seems a tad out of place and throws of the balance some. Still, on a hot day it would be easy to drink a lot of.
Summer 2011 - Following the taster of the Casper was the Funkwerks Key Lime Rye. Considering how light and delicate (and fragile?) the Casper tasted, I wondered if this wouldn’t taste like a tropical version of the Casper. It, too, is a straw, yellow beer. It differs distinctly in the aroma, where I catch scents of sourness, though it’s not obvious that the tang is from limes. That comes in the taste, where razor sharp pricks of lime dot the flavor amidst a background of grains and general flavors of a wheat beer. On tap at the brewery. Pours with a really pale yellow body with a white head that fully lasts. Aromas are very fruity, spicy, rye, phenol, hoppy (or citrus at least), grassy and lime. Flavors are fruity, lime, estery, spicy, grassy, peppery, and super dry. Very nice yeast character. Light bready and spicy malt character. Well made. Lively bubbles. Dead dry. on tap-pours a thin white head with hazy straw color. Aroma is lemon, sulphur, light malt. Taste is lemon/banana, light malt. Soft carbonation.

Draft at Funkwerks. Pours a pale yellow with a fluffy white head. quite pale and slightly hazed. Nose is faintly citrusy, but more yeast forward. Lots spice and white pepper on the nose and grainy. The lime is really just there by suggestion. On tasting, again, really fresh and clean, lots of refreshing fruity esters from the yeast and white pepper. Really clean and enjoyable. On tap at the Funkwerks tap room in Ft. Collins, CO. Light yellow pour with a white head. Funky aroma of barnyard, leather, and light citrus. Citrus flavor upfront with funky lime and soapy flavors. Tap at Funkwerks - hazy golden - pretty much a well-executed saison overpowered by an addition of lime juice that is a little over the top - soft carbonation - toasty graininess, wheat - dry and flinty, with a mild touch of funk - some creamy texture - again, though, the lime it a bit much - would be better without it - still nice, especially for summer.
