Bottle sample during RBSG 2010 shared by Kyoto lefty from backlog notes. I can remember at the time that I didn’t feel like I had a grasp of sake, but tried everything anyway. This wasn’t like any sake that I had sampled to this point (or since). Pours a deep mahogany brown color. Clear dark amber with no head.
Nose is sweet and vinous, light smoke, burnt toffee, sugars, nutty tones.
Taste comprises caramel, walnut, big sherry notes, light booze, sugars.
Full bodied, fine carbonation, warming alcohol in the finish.

Clear caramel colour, no head. Aroma of honey, balsamico, japanese soy sauce, light pedro ximinez sherry notes. Sweet flavour, light sour, soy sauce, sweet balsamico. Finish caramel, shiitake mushrooms, earthy, quite a lot of umami, hearty as a bowl of beef stock. Brilliant! I love this stuff!! A blend of three sakés, all older than I am. With this flavour. Wow.

THX! to KyotoLefty for this extremely rare treat. A blend of sake’s from 1972, 1973 & 1974. Descriptions on the bottle state that this is like 7 times sourer than the most sour sake’s on the market, 4 times sweeter, 5 times higher acidity,… etc. this is mind-boggling all over the place. It seems like there are only 3 aged sake’s listed on RB? This stuff is not common. 300 ml. gorgeous clear bottle sampled. Clear dark brown amber, slight very dark Bordeaux hue. Way, way darker than I ever imagined that sake could be. Nose is balsamic vinegar, salad dressing, incredibility pungent, soy sauce, oak but also sweet, sweet Japanese soy sauce, brown sugar, old musty bunker, brutal in the best way imaginable. Taste is sweet balsamic vinegar, acidity coupled with big sweetness, caramel, brown sugar, salad dressing, big shitake mushrooms, base sours, teriyaki sauce, very slightly sour brown broth, very oily wood. Flat, thick oily, huge sauce presence. Sweet, sour & acidic at the same time. Extremely complex, delicious, unique, unlike what I could ever imagine. Absolutely zero alcohol presence, I have trouble even imagining that this is an alcoholic beverage, let alone a sake. Astonishing. Too b ad there is no stuff like this floating around here. Bottle share at Borefts 2013 by KyotoLefty - thanks! Darker than any sake I’ve ever seen. Aroma is soy sauce, shiitake mushrooms, oyster sauce. Starts sweet on the palate, with a good umami finish. Taste is teriyaki sauce, beef broth, shiitake mushrooms. Would not pick this as a sake! So tasty.

UPDATED: SEP 24, 2013 First try upon opening.
Rather oily-like pouring, (cold) hazy, sepia-coloured liquid with orange highlights. Musk, nutty, oil-like nose, and benzene. Bit of slightly rancid arachide. Flavour, however, stands perpendicular on the nose: like rich, oily, very aged vintage amontillado sherry. A wry, walnut-like flavour even strengthens the sherry effect, hinting even to porto or homemade fortified wine. Oily, viscous, slightly sweet and syrupy (more warming up), but mainly wry, tannine-like astringency. Very special indeed. As advised, I will do a second try in a couple of days. Served warmer, the sake is more clear; deep-brown amber; alcoholtears leaking from the glass. [4/5] Benzene more outspoken, nuttiness ŕnd arachide are still there, but the latter rather as the peel - used in textile - still a bit rancid, if much less. Alcohol comes through more. To me, it still comes over as a chemical woodcleaner, than as a comestible. [5/10] Again sherry, Amontillado, sweet with a bitterish-woody finish. Drier than the first try: less outspoken sherry. Non-salty snacknutmix. Benzenearoma is in the flavour as well, hazelnutoil. [7/10] Rather fiery alcoholheat backthroat. Very slick & oily, viscous. [4/5] I keep my first rating/marks, as they are, against expectations, higher. It’s not something I’d drink everyday, but as something extra-ordinary, it defies challenge. [14/20]
