De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen. De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

a very interesting fermentation. slight bitter fruitiness which did not come from hops rather than byproducts. aroma profile is huge , apple, grapefruit plums.

You can smell the funk throughout the room as soon as the cork pops. Pours a dark bronze and caramel colour. Smell is among the funkiest I've ever smelled, fermented hay and barnyard, chicken coop, smells bone dry and weird. Enormous mouth coating funky barnyard flavours, earthy, incredibly dry, a tart acidity but gentle, not sharp or sour. I am privileged to drink such a fine fermentation.

Bottle, vintage 2016. Pours dark golden, with a big creamy head. Aroma is tart wooden brett and hay, with nice funky barnyard notes. Medium body, with average carbonation. Flavour is tart lactic notes, hay, barnyard and wooden brett, as well as wooden barrels and earthy notes.

After releasing the cork from the bottle, first sour aroma. Pours golden-amber, slightly hazy. First impression is very sour, then bitter and sour, later a more complex blend of sour fruity elements, a hoppy bitterness and some earthy flavors from fermentation sets in. Certainly not for everybody, but from an official Gueuze afficionado, this has to rank among some of the best beers at all. Top notch!

Poured from a bottle, a hazy gold color not much of a head. Aroma is light fruit , slightly sour. Carbonation is light. A tart fruit taste, medium body with a tart finish.
