Ondineke is a classic tripel, brewed in the ancient way, again with exclusive natural ingredients: artesian water, malt (barley), hops, yeast and liquid candy sugar. As in the Saison no spices are added. Ondineke is an unfiltered top fermenting beer. It is soft, creamy, and of golden color. It is double hopped with the last real hops available from the region of Aalst (The variety is Hallertau Mittelfrüh). Ondineke has a positive taste evolution and the bottles are best kept standing in a cool, dark place. It is best before two years after the bottling date. 8.5 % alc.vol. makes this a beer to be savoured. Preferably Ondineke is to be served at a temperature between 6 to 10° C. Moreover Ondineke is at its best when served in the originally designed Glazen Toren glass.

Open this one over the sink!! I lost the top quarter of the bottle to foaming. Luckily I decided to open this ahead of time so I continued to enjoy what was in my glass as this science experiment spewed beer out of the top for about 5 minutes. I assumed I was not going to be able to pour this (because of the CO2 level) be it cooperated nicely into the glass. The first thing that got me is that it smelled like yogurt. So that it why it is a gusher. Contamination by a lactic culture. This ruined it for me. It translated to the palate as well and it became an expensive drain pour.

Bottle enjoyed at home
Golden, some haze, huge beige head. Smell of fruity yeast esters, spices, herbs, clove and cardemomme, grass, malts, quite distinct tripel aromas. Medium sweet, full bodied, alot of nice malt flavors, hay some newly cut grass, spices. Medium bitter, grassy tail. An awsome tripel!

Ein Tripel im Farmerstyle. Säuerlicher Eleganzer mit Limettenkiss. Prickelnd, edel, subtil 👽 ssss. 0,1 beim ZYTHOS 2017.

Triple de 8,5 % abv, en format 75 cl, avec du houblon Hallertau Mitttelfrüh cultivé dans la région d’Alost. Emballage papier autour de la bouteille comme d’habitude. Mon exemplaire avait quasiment 4 ans de mise en bouteille, pour 2 préconisés par le brasseur. Couleur doré un peu ambré, à la clarté nette. Bulles très fines et très nombreuses, en fontaine centrale virevoltante comme une spirale adn, superbe. Mousse beige clair, bien soyeuse, stable à 2 mm. Arômes de malt cara, houblon, pointe de candi, poire très mûre. 1ère bouche très soyeuse, quasi veloutée, à l’entame malt cara, riche, bien dosé. Arrière-bouche sur un couple malt/houblon, avec une pointe d’aubépine. 2ème avec une fusion malt/houblon beaucoup plus élaborée. Arrière-bouche longue, assez complexe. 3ème à l’allure bizarre entre triple, amber ale et ale en fût de chêne. Arrière-bouche très riche, boisée. Longueur où une dominante ambrée se met en place, passant donc à côté du style de la triple. Jambes fines, serrées, groupées. Levure souple, riche, un peu vineuse, belle ligne. Alcool bien progressif, il assure sans toutefois atteindre son objectif sur la longueur. Finale assez linéaire. CONCLUSION : des choses intéressantes dans cette triple, dont un très beau visuel, et des saveurs riches, mais sur la longueur on est assez nettement en-dehors du style … Pourquoi ? Alors que ce brasseur connaît tous les styles comme sa poche ...

Pours a light amber body with a medium frothy head. Aroma is yeasty funk. Taste is full and creamy with tones of sugars and syrup with a subtle hopiness.

Colore dorato leggermente torbida, schiuma media poco persistente, carbonazione fine abbondante, aroma tenue e sfuggente di lievito e frutta. Al palato limone, miele. corpo rotondo, birra dolce con finale secco. Una tripel ben equilibrata dove l’alcohol è ben mascherato e dalla facile bevuta.

Appearance: clear straw with one fat finger of fluffy white head diminishing rapidly to a thin skim, moderate lacing. (4/5) Aroma: sweet grainy pale malt, citrus, yeast, floral, melon, grass. (5/10) Taste: moderate sweet, mild bitter. (6/10) Palate: Medium-light body, moderate carbonation, off-dry sweetish warming finish. (3/5) A very strange beer. It starts off smelling like nothing so much as an adjunct lager - no lie: it smells exactly like a Bud Lite - but as it warms, a little complexity becomes apparent. A little. Not much. Some Belgian yeast character develops as it warms, but remains mild while a sweetish alcohol warmth remains present throughout. (13/20)

En bouteille. Bière dorée non filtrée. Nez fruité d’agrume. Acide et fin amère légèrement maltée. Bière agréable et légèrement surprenante pour un triple.

Une triple délicieuse, à la robe dorée, mousse crémeuse et persistante. Nez superbe d’élégance sur des notes fruitées, florales, maltées et épicées. Bouche tout aussi élégante, avec un très beau fruit en attaque, une bulle crémeuse, une longue finale tout en délicatesse. Un très belle bière de plaisir.

Bottle, 750 from Beergium. Shared with rest at the grand tasting 11/2016. Pours cloudy yellow with medium white head. Perfumish, some citrus notes, yeasty, malty, spices. Light to moderate sweetness. Creamy texture, average carbonation. Dry finish, medium bodied, alcohol well hidden.
