Tap at Pony. The beer pours with a hazy golden colour and a tight sticky white head. The nose is loaded with bright lavender and lemon peel as well. A kiss of light wheaty graininess as well, but the lavender is most prominent. Fresh pale malt and a nice crackery dryness on the back of the palate. Light and quite refreshing. Draft at Clybourn. Poured a clear gold color. The head was sticky and white with good retention and lacing. Pleasant fruit dominated nose accented by a whiff of pale malt. Distinct fruit aromas included the likes of apricot, pear, and orange blossom. Light to medium bodied and slightly sweet. Tap at Rattle n Hum: Hazy yellowish/golden beer topped by a white film of head that retains well. The aroma is quite unique- seems like sorachi ace hops- lots of lemon grass notes and freshly cut ginger with a touch of catty/mercaptan notes, but it’s more hempy and earthy, not sulfuric. Nice! Fluffy and dry body with a crackery light but firm malt backbone. The hops are hempy, spicy, lemon grassy with a fresh ginger note. I’m thinking they used sorachi ace, or some kind of unique hop- perhaps it’s just spiced in a certain way. Either way this stuff is unique and very cohesive. The back is hempy and dry. Sampled from the tap at the Clybourn location. Poured a clear yellowish gold with a white head that lasted throughout the beer and laced nicely. Aroma was a beautiful combination of pine, grapefruit and lavender with just a hint of sweet grain backing. Flavor was more overwhelmed by the lavender, but there was still underlying pine and grapefruit notes.

On tap at the Clybourn Brewpub on December 29, 2010. Not sure if the recipe changed since last year, but here is the current description: "Blonde Belgian style ale brewed with Fuggles, Amarillo, and Simcoe hops and spiced with lavender."
Pours a nice golden color with a quite large white head with really nice retention and quite a bit of lacing. Thin cap throughout. The nose is really nice and I love the combination of the lavender with the hops selected here. The Amarillo and Simcoe interaction works quite well with the addition of the lavender. The taste isn’t quite as explosive. The floral character doesn’t quite mesh with the hop flavors as well, though this still tastes quite good. Really nice feel with a dry finish and good carbonation. Drinks quite well; I would certainly like to see this added to the bottled Belgian lineup down the line.

Lightly cloudy straw color with a taller white head. Aromas of thistles, grains, wheat, pale malt, and light yeast. Hints of sweetness are swept away with spice and herbal note. Tap at RNH. Pours a hazy blond with a good head. Aroma seemed highly spiced with flowers and herbs- lavender and dandelion kinda stand out- gets a bit soap like- hints of oregano and phenolic yeastiness- on toast and biscuity Belgian malts. Flavor is biscuity malts, crackery, saison like light fruitiness, herbal and grassy more lavender and soap, spicy finish - somewhat clean and easy mouthfeel in the end. Draft @ Rattle. Golden pour with some white head. Floral, spice, grassy aromas. Beer is crisp, hoppy, both pine, floral and spicy.
