"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

’12 vintage. Draft. Pours espresso brown with no head. Rich sweet aroma. A little thinner than previous years perhaps but still nice and syrupy. Big barrel fwd character with sweetness vanilla, chocolate, and light roasty malts. Pretty hot but Improves dramatically as it warms to room temp.

Bardzo dobre piwo. Naprawdę fajna czekolada ciemna, kakao, trochę beczka, ale lekka, nie przeszkadza. Generalnie super piwo. RIS, któremu nic nie brakuje.

Puur zwart bier met mokkakleurige schuimkraag. Donker fruit, chocolade, koffie, eik, lichte roasttoets, bourbon. Een genot om te drinken. Heel erg zacht voor z’n abv. Vol en licht romig in de mond. Mooie afdronk. Topstout.

2013 vintage bottle shared at tasting. Black colour, small beige head. Strong aroma of pralines, chocolate, bourbon, vanilla, toasted coconut, mild mocca. Taste is medium to heavy sweet and medium bitter, rich dark chocolate, pralines, bourbon, vanilla, a hint of oak, coffee, light roasty, a bit warming finish with notes of wood and chocolate. Full body, oily, creamy texture, soft carbonation. Delicious - an essence of bourbon barrel aged imperial stout.

Rocznik 2016: Super beczka, wanilia, czekolada, gładkie, kremowe, świetne piwo z ukrytym alko. Rocznik 2014: Lekkie utlenienie, kakao, czekolada, fajne ciało, ciemne owoce, ta beczka schowana nie tak fajna jak w świeżej wersji i bardziej popiołowe, ale i tak klasa. Zdecydowanie im świeższe tym lepsze.

12floz bottle 2012 vintage (BOD: 11.20.2012), paid about $20 for a four-pack at the time...Jet black in color with nary any head, such as it is BIG stout. Boozy bourbon and toffee aroma intimidates as much as it invites. Heavy on the palate meant for sipping with flavors of vanilla, toffee, hazelnut, and smooth roastedness imparted by the malts and bourbon barrel aging. This beer when I’ve had it is superb year in and year out. It ranks right up there with the very best BA imperial stouts available.

2015 bottle 13.7% "cellared" at room temp. Poured with a dark brown head that quickly faded. *Needs to warm up* Great chewy mouthfeel, great big aroma of boozy chocolate & brownies. First sips when colder were very woody/tannic but this has faded as it warms up. Still fairly boozy.

First off if youve never had it and bought a bottle !!!!!STOP!! and put it in the cellar for a minimum of 12 months before you decide if the hype is real because it definitely is. Fresh draft this stout is an amazing treat but as it ages in a bottle it becomes a masterpiece thickening into a bourbon infused thick fudgy motor oil. Variants are good dinosaur barrels are cool but the OG that you let age for as many years as you could stand before you cracked it open is the real treat.
