"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that its a great cigar beer, but I havent yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editors Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. Its essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

head: capuccino , bubbly , away fast colour: black as hell smell: chocolat , coffee, bourbon , vanilla coconut, roasted malts, candy sirup, ashy , smoke , cigars ( higher level brands ) taste: start is deep black chocolat with pralin filling , candy sirup , caramel and vanilla followed by a boozy bourbony alcohol flavour that burns the mouth a bit , bitter cocoa powder and sweetness of brown chocolat, when swallowed alcohol remains, together with a beautifful bourbon/whiskey palate and a bit of smokeyness ... end is a bit roasted malts and semi dry , oily texture , AWESOME I WANT ANOTHER BOTTLE OF THIS ! sipping this beer is obliged !

Pitch black, very strong whisky scent. Taste is very sweet and there is also heat from the 14%, tar like texture, very roasted and bourbony flavour. A true sipper, incredibly heavy and warming beer.

This is a chalky brown beer without head. Its delicious. There is flavor to spare. Its totally smooth too. Would go awesome with a cuban.

From 22oz bottle to snifter, 2016 vintage. Pour is an intense black, thinner tan head that dissipates quickly. Large notes of roasted malt, coffee, caramel, molasses, booze. Taste is sweet with touches of bitter, heavy body. Oily mouthfeel with a lingering warmness from the alcohol. Unreal beer. The complexity is outstanding. Already looking forward to the 2017 batch.

2016 bottle poured into a snifter showing pitch black with no head. The nose shows a lightly sweet caramel note permeates through the center surrounded by strong alcoholic bourbon presence. The palate is full bodied, thick, sticky and oily with a light carbonation. Moderate sweetness appears on the mid-palate but mostly calm and clean bourbon through out - smoke, vanilla, and charred wood. Despite a strong ABV, it doesnt become apparent until the finish which leaves a pleasant alcoholic spicy warmth. I can definitely see why this did so well

2016, 13,6%, dark brown black color, with a dark beige head, with a light boozy bourbon oak barrel, subtle maple syrup, fruity roasted, black, toasted malty nose, with a faint molasses, toffee, light coffee, burnt toast accent, and a mild vanilla, subtle burnt fruitcake, burnt toast note in the aroma follows through on a medium-bodied palate with a warmth bourbonish, vanilla, subtle grated coconut, chocolate character, with some sweet fruity roasted, black, chocolate, toasted malty, faint toffee, molasses, coffee flavours, leading towards a warming smooth bourbonish, vanilla, coffeeish, chocolatey, lingering sweet fruity roasty maltiness finish.

Aromas of massive bourbon, chocolate, dark cocoa, toffee, figs, raisins, dark malts, leather, caramel, vanilla, hints of toasted coconut and oak. Pours pitch black with a thin brown rim and noticeable alcohol legs. Taste brings thick chocolate, dark malts, toffee, chocolate syrup, cocoa nibs, dark chocolate upfront. Mid palate offers heavy bourbon, barrel wood, vanilla and faint coconut. Finishes heavily boozy with complex dark malts, chocolate, fudge, malt syrup, figs and caramel. Overall, what else is there to say? Its a legendary beer for a reason. Always a treat. A+ rating.

Bottle from Kroger. Black, thick, and oily with a very tiny short-lived tan head. Very smooth. Aroma of roast, whiskey barrel, and a hint of cocoa and dark fruit. Very rich chocolaty roasty taste with a light woodines. Excellent stout for sure, and no complaints, but not quite as bold as Id hoped.

Why I found a bottle of this sitting alone on a shelf at my neighborhood Kroger will forever baffle me. Pours black with a dark tan head, cascading slippery lace. Aroma of wood, smoke, bourbon, cherry, licorice and chocolate.... Inviting enough. Super creamy and full on the tongue.... But still some pleasant carbonation. Heavy on the bourbon, you can taste the age in this beer... Chocolate covered cherry, vanilla, nice lactose edge wrapped it up. Quick burn as it slides down. No medicinal notes like you often get in beers like this... barely boozy. World class, but not top 50 in my opinion.

Poured 55 degrees into a pint ale glass. Appearance, opaque black almost no head. Aroma, vanilla, sour dough bread, and black licorice. Taste, light sweetness, smoke, and medium dark chocolate. Finish, clean with strong smoke, black licorice, and alcohol. A good stout but the 2016 bottle probably needs stored to mature.
