"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

Opened a bottle of 2008. Most of the bourbon has gone. The aroma is still a big bold stout with caramel, malt and some coffee but the bourbon is absent. Taste is sweet roasted malt, coffee, molasses and some bourbon. Very mellowed. No alcohol. Very little carbonation left but the heavy mouthfeel remains. It’s still excellent but I think past it’s prime. Bottle says it ages for 5 years but 2-3 is best in my experience.

Bottle, 2016 vintage. Aroma is lots of bourbon and vanilla, also chocolate, warming alcohol, a bit of buckwheat honey. Pleasant creamy texture. Very good.

(2016 vintage, bottle ) Aroma: chocolate,pure bourbon, very woody, sweet vanilla, barrel char, dark fruits. Appearance:black color, small dense head. Taste: sweet, flavour of sweet chocolate,huge vanilla,wood,coconut,bourbon, dark fruits, loong vanilla finish. Palate: full body,thick texture,low carbonation, Overall: Uber rich, woody, bourbon-driven stout. LOVELY !!!

I was able to get my hands on 5 bottles from 2015 and still have one left. Beautiful dark color. You can smell the sweetness right away. Very thick and syrupy which is not my thing but for the style it is very good. Taste is a vanilla, raisins, and a ton of molasses. Didn't get much of the bourbon taste

From tap at Doolittles. Zowie, this is good sh*t. Pours nearly black with little or no head. Thick, rich flavors - dark fruits, vanilla, chocolate, sweet roasted malt, oak, whiskey, caramel, charcoal, smoke and alcohol. Full bodied. Huge, awesome.

Chocolate & molasses on the nose with a ton of bourbon jumping out the glass. Tons of chocolates and caramel on arrival. Raisins in the middle with a touch of tobacco. Sweet vanilla/maple notes coming from the bourbon barrels at the end. Thick, mouth-coating body that’s slick and rich. Warms up beautiful with all the flavors and intensity kept together. Absolutely amazing beer—I don’t care if it’s not "craft"! 100/100!

Rocznik 2013: Czekoladowe praliny z lekkim alkoholem, beczki nadaly szlachetny posmak bourbonu, duo tanicznosci i wanilii. Dosc slodkie z dobrze podkreslona lekko palona goryczka na srednim poziomie. Duzo kawy i lekkie utlenienie ze wzgledu na rocznik. Pelne i oleiste cialo zakleja podniebienie. Przepyszne i warte swoich pieniedzy.

Bottle courtesy of wombat23. 2015 vintage. Pours black from the bottle; the thin light brown head soon dissolves. Aroma is molasses, licorice, chocolate, and noticeable barrel. Taste is bittersweet, turning warmer, more alcoholic and increasingly bitter going into the finish. The taste of bourbon lingers long after the swill. Full bodied with moderate carbonation. Rich, thick, clingy. And sticky. Overall a real slow-sipping treat. Great stuff.

Bardzo dobre piwo. Naprawdę fajna czekolada ciemna, kakao, trochę beczka, ale lekka, nie przeszkadza. Generalnie super piwo. RIS, któremu nic nie brakuje.

Puur zwart bier met mokkakleurige schuimkraag. Donker fruit, chocolade, koffie, eik, lichte roasttoets, bourbon. Een genot om te drinken. Heel erg zacht voor z’n abv. Vol en licht romig in de mond. Mooie afdronk. Topstout.
