"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

UPDATED: JAN 9, 2018 1st of 2 2017 bottles, drinking 1/8/18. Pours a dark, dark brown with no head. Nose is big - has a boozy smell, with some black licorice. Taste is huge - chocolate is the strongest, but there is also some vanilla, and you can taste the hop backbone but it remains very smooth the whole time. The alcohol is really well hidden. 2017. Inky Black pour with a thin light brown head. Aroma is a huge blast of chocolate, bourbon, and molassess. Syrupy molasses and toasted caramel assault your tongue with a hint of smoke. Finish is alcoholic heat and sweetness. Oily thick mouthfeel perfectly appropriate for the beer. This is good.

Older vintages are head and shoulders better than newer years. At it's best, this beer is the standard by which all BA Imperial Stouts should be measured.

Aroma: bourbon, roasted dark malts, bitter chocolate, vanilla, caramel, dried red fruits. Appearance: jet black and brown head. Taste: bourbon barrel, vanilla, rich dark chocolate, cocoa, oily, warming alcohol, velvet, semi-sweet. Palate: full body and medium carbonation. Overall: what a great rich RIS, intensive bourbon notes, bitter chocolate.

Bottle, 2017 year version (14,1%). Thank you Justing for sharing this. Pours dark brown, almost black. Some light brown foam there but not too much. Soft toffee nose, light booze and toffee mixed, liquid chocolate with some vanilla. Taste is interestingly spicy, good heat and nice cocoa there. Bourbon vanilla and booze is strong and warming.

Fat @ Milk and Hops - Chelsea, NYC. 2017 version. Svart med ett litet men beständigt beige skum. Dofter av bourbon, karamell, choklad och vanilj. Smakinslag av choklad, bourbon, läder, karamell, russin och jord. Stor och fin kropp. Oljig munkänsla. En makalöst god öl.

Vanilla, oak, smoked, chocolate, dark fruits, dates and raisins, dark malts, black with a thin beige head, full body, oily, low carbonation, an explosion of bourbon and hundreds of other sensations....there are many whales outhere but i think that this boy can still compete.
