"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

Aroma is bourbon boozy, appearance is black, taste is amazing bourbon strong flavors, palate is hot.

Aroma: coconut, vanilla, oxidation cherry notes, semi-sweet chocolate. Taste: liquor, sweet, some delicate bitter aftertaste. Carbonation is at low level. Head isn't impressive, beer is oily, black.

Got a second bottle of the 2017 edition of Bourbon County Stout locally after picking up the first on Black Friday last year. This makes drinking the beer a higher priority than before. Not inexpensive for a 16.9 oz serving, just saying. My serving glass will be my ABGB snifter, the favorite for stouts. Do not know whose bourbon barrels were used this year, curious about it but I couldn't tell the difference anyway. The lid comes off and I will attest that this brew is fragrant, Strong alcohol, not a criticism, caramel, hard candy, woody. After the pour, a coal black body topped by a here-and-gone medium-tan head. Now the big test, holy crap, what a fine taste. Stiffly chocolate initially, the caramel shows up again, burned toast, malt, a slow burn as it goes down.Truly a great combination of the stout completed by a shot of whiskey. Touches all the bases for me. Do not know when I will have the other bottle, maybe after the release next year.

W aromacie dużo czekolady, pralin, wanilii, delikatny kokos, dębina, lekki bourbon. W smaku słodkie, praliny, wanilia. Na finiszu gorzka czekolada. Alkohol szlachetny, dość intensywne piwo, sporo ciała.

UPDATED: APR 2, 2018 Barwa czarna nieprzejrzysta i brak pianki. W aromacie suszona sliwka, rodzynki i przyjemna palonosc (dobrze doslodzone wloskie espresso), poza tym duzo pralinek, migdalow, debiny. Klasa. W smaku przyjemna palonosc, duzo migdalowych i bourbonowych nut + wanilia. Cialo takie akurat oleiste. Mega klasa. Mokre drewno. Swietny lezakowany ris i zasluzona swiatowa czolowka.

2012 vintage bottle, thanks Mike! Aroma is crazy bourbon barrel, full of coconut, vanilla, wood, some dark chocolate, dark fruits. Taste is intense, sweet but not very, gives quite warming feeling. Smooth, not very dense, lots of chocolate, some coffee, dark fruits, bourbon, a tiny alcoholic note.

Bottle pour into tulip glass from Whole Foods, Lynnfield (2017 vintage). Appearance is opaque black with nice sparkle at the sides of the glass, ephemeral reddish-light-brown head and no lacing. Aroma is dark fruit, dark chocolate, wood, subtle bourbon, roasted malt. Taste is richer dark chocolate than the aroma, dark fruit, bourbon, late roasted coffee. Palate is medium-to-full bodied with silky smooth texture, soft carbonation, pleasant alcohol warmth and sweet chocolatey, fruity finish. Overall, perhaps letting it age more would have given even more nuance (just couldn't wait), but nice richness and complexity and balance without going over the top in any direction.

2017. Inky Black pour with a thin light brown head. Aroma is a huge blast of chocolate, bourbon, and molassess. Syrupy molasses and toasted caramel assault your tongue with a hint of smoke. Finish is alcoholic heat and sweetness. Oily thick mouthfeel perfectly appropriate for the beer. This is good.
