Tasted on 5/24/11 on draft at the Clybourn Brewpub. Pours clear pale golden with a thick white head that slowly recedes to spotty lace. The nose is fruity yeast along with spicy hops along with some cereal malt and lemon pith. Overall, a very classic Saison aroma. The flavor is lightly sweet malt up front, moving to fruity yeast and lemon pith, black peppercorn spicy hops, and a pleasant bitterness. On tap at Clayborn. Pour is golden yellow with a thin half a finger-wide white head. Looks to be very carbonated and good lacing when the head subsides. Aroma is of grass, grains, bread, earth, pine needles, and just a hint of citrus. Flavor is of light fruits and citrus with a earthy, yeast character throughout. Somewhat sweet for a saison but refreshing and very drinkable.

Draft at Clybourn. Pours an attractive deep gold with a persistent sticky head. Nose starts out with a wallop of banana followed by a ton of fruity esters. The esters are very present. Lacks funk and finish. Could use more of a citrusy slant in the nose. On taste, it is pretty creamy, very firm bitterness. Pretty big beer. More of that fruitiness comes through, but sorely lacking the citrus. It sure ain’t Sofie and I think that is what I dislike about it. This one was very tasty. On draft at Clybourn brewpub. Very citrus, slight bitter aftertaste. Color is hazy yellow, white foam and lace. Taste is orange, pineapple, and slight yeast and malt taste. Flight draft on tap at the brewpub (Chicago, IL). Pours a crisp golden hue with just a faint haze, almost transparent. A bright white smaller head, dies to a small ring, laces small. Aromas are crisp grain, pale malts, bread dough, touches of grassy and estery apple and pear. Light lemonrind, touch of dust, hay, and yeast. Nice and fairly complex. Initial is lighter end of medium bodied, bread dough, touches of fruit esters, apple, pear, light lemon, grass, touches of yeast with faint spice. Into the middle, more spice shows up, grass, fruity esters balance in, dry with some decent bread dough, pale malts. Finish is citrus, fruit, touch of honey. Not bitter, smooth, but sweeter. Sampled from the tap at the Clyborn location. Poured a hazy pale golden yellow with a white head that dissipated slowly to the edges and laced slightly. Aroma was quite fruity with citrus coming through (mainly lemon) with a bit of floral and yeast notes backing. Flavor was similar with a growing lemon note and a bit of a perfume note as well to bite the bitterness.
