On tap at Clybourn brewpub. Pours dark brown with tan head. Aromas of spices, roasted malts, some banana, and light citrus. Flavors of roasted malts, ash, banana, light citrus, and spices and fruit. Really too much roasted malt for this to be a saison in my opinion. I like black saisons overall, but this one missed the mark a little. Draft in a sampler at the Clybourn brewpub. Pours a dark, opaque brown color with a small tan head. Notes of earth, molasses, vanilla, banana, cherries, sweet bread, and mild spice. Medium-bodied, with an earthy mouthfeel and moderate carbonation. Nothing here stands out that much but a nice dark saison anyway. TheAlum (7164) - Aurora, Illinois, USA - APR 11, 2012
Flight on tap at the brewpub (Chicago, IL). Pours a fairly dark blackish hue, dark black body isn’t opaque, as ruby notes on the edges and bottom show some color and life. A frothy moderately sized tannish head dies to a firm ring, laces ok overall. Aromas are a blast of fruity elements, offering pears, chocolate, and touches of roast and apples. Lots of pears with mellow biscuity malts, some cherries, and touches of Belgian yeasty spice. Touches of cherry cough syrup. Initial is medium bodied offering an interesting play on roasty toast and fruity pears, some biscuits, gentle toffee, as the beer starts to stick well to the palate. Roast and cocoa elements show some girth into the middle with some lemony bitterness complimenting the roast and not necessarily drying the beer out, but making the backend a bit more bitter. An odd beer overall, with some Belgian elements, cherries and pears, yeast, and a bit of a cloying roast and cocoa dryness that really sticks to the back of the palate. Some cough syrup elements start in the middle and trail out a bit. Bubblegum and some odd sweetness and a boatload of bitter cocoa with the roast on the back.. A bit of a trainwreck for me as far as how it all works. Sad to say I wouldn’t return to this. Aroma and how it looked weren’t bad, but overall the beer was all over the place. Draft at Clybourn. Pours a deep brown-near black. Tan head on top that sticks around. Nose is somewhat bland and generic, banana, vanilla and white pepper. Not much in the way of malt or hops in the nose. On tasting, some light fruitiness. Yeast driven overall. Has the malt backbone, but not a lot of character. Light roast on the finish. Taster at the Clybourn brewery. Peppery nose like, the Pepe Nero. Also with a hint of vanilla. Solid black beer, even then I can see some haze in it, and a thin bubbly head. Taste is full of earthy spices. I suspect some rye as well, A very light sweetness but plenty of thick malt and bubbly texture.

UPDATED: MAR 20, 2011 Growler purchased at Goose Island Clybourn. Pours dark brown with a cream colored head that dissipates quickly and rings the glass. Aroma of malt and slight hops. When held up to light it looks like muddy water.
First taste is spice then turns bitter. Nice, smooth taste. Very good beer, almost like Pepe Nero, but spicier.
