Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

765ml bottle from BCL on Robson/Denman. Pours a slightly hazy golden with a white head. Aroma is barrel, somewhat similar to lambics (Alex :-P), some strawberry and peppery notes. Taste is pretty the same with moderate sourness and frutineas, quite dry, moderate to high carbonation. Pleasant.

Alaranjado de leve turbidez, sem espuma. Aroma bastante fácil de identificar o morango, acidez presente mas mais distribuído com o dulçor do que a Lolita. No paladar a acidez é média alta e crescente, bastante seca no final, leve dulçor. Corpo bem leve e alta carbonatação. Final mantém o morango presente e bem dosado, acidez diminui um pouco com aumento da temperatura, paladar bastante agradável.

Bomber into tulip glass, tad hazy clear golden color with off-white head. Aroma notes of strawberries, white vinegar, farmhouse funk, hay and some white wine. Taste adds strawberry juice, peaches, honey, green apple, some lime, sour, white sugar and some white pepper. Medium-heavy body, moderate-heavy carbonation, creamy, tad prickly with white fruity sour finish. Very nice fruity sour, love the richness.

draft sampler that poured a lighter yellow with white wispy head. the aroma was some slight funk some brett hints of fruit. the flavor was a little different than what I was expecting. did get some strawberry flavor on top but then faded to some brett and mild earthy funk. not my favorite style but this was pretty good.

Slightly hazy golden with a thin white cap. Really interesting dusty earthy hut strawberryish nose that’s a little tart and floral. Crisp dry funky bretty flavor with nice strawberry and white wine and gentle tartness. Light peppercorn at the finish. Really cool, makes me think of Kat’s strawberry mango moscato by Arbor Mist she made us in Seattle.

On tap at the Knick. Bretty funky nose, oak, leather, yeasty esters and funk. Medium golden amber clear with thin head. Medium body with medium carbonation. Nice fruity ale with Brett and mild sweetness, good oaky-winey notes. A little watery at the finish with smooth after.

Pours a cloudy dark golden (almost orange) with a quick, white head. Yeasty (brett) nose with some sour, strawberry, and tart vinous notes. Active fizz, crisp and light texture with a dry finish. Initially a tart, acetic fruit flavor with a saline, dry champagne background and some slight mustiness. The honey is faint and seems to end up with the strawberry flavors. The briney notes evoke a gose and the tart fruit compliments it well. The alcohol notes are hiding around the finish and remind that it is 9.5%. Though RB lists it as a sour / wild ale, GI labels it a farmhouse. It works well as a hybrid. The tartness is present, but with a crisp, light dryness. It lacks the heavy slick texture that often accompanies a sour beer.
