Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Tasted on 6/29/14 from a capped 750mL bottle purchased at Bruisin’ Ales. Pours slightly hazy golden orange with a thick, fizzy white head that recedes fairly quickly to nothing at all. The nose is really great, with plenty of fresh, honeyed strawberry, a great sour note, and earthy white peppercorn. The flavor is the same with sour strawberry, a touch of spicy and funky yeast, and plenty of earthy white peppercorn. The body is medium with lively, almost sparkling carbonation, and a long earthy white pepper and strawberry finish.

On tap @ Rattle N Hum. This is a cloudy orangeish looking one. It has a small whiteish quite lacing and definitely nice looking head on the top. on the nose it’s, oh, a little sour and wood tart with green small apples, pink pepper corn, wood and it’s also a little sour cherry stone-like. Yeah, like this. This is quite a different one for sure. Lots of tartness in the taste also. Wood, soir fruits. A little pineapple, small green apple. Lots of American vinegar here. It feels mild oily in the mouth and it’s just about average on the prickling carbonation. Quite refreshing, and definitely nice tasting. 19.06.2017

750 ml bottle from LCBO. Pours a murky peach colour with only the smallest whiteish head. Aroma is strawberry, honeyed grains, lemon and a light funkiness. Flavour has surprisingly assertive tartness with lots of lemon, crabapple, strawberry, pepper and honeysuckle. Drying finish. Slick mouthfeel. Quite nice.

750 ml bottle. Pours a hazy gold/amber with little head. Aromas of salty funk, old lemons, wheat, and sour fruit. Flavors of strawberries, muddled tart fruit, white pepper, and light toasted malts - with a bit of sweaty wool socks...

750ml bottle from LCBO. Pours an opaque golden colour with a samll head. Yeast particles floating around. Aromas of yeast, citrus, apples, and strawberries. Taste matches the aroma with a sour citrus backbone and some subtle strawberry flavour towards the end. Similar to the Belgian Sour style. I like how the sour and fruity notes balance out the dry and spicy farmhouse style. Excellent ale.

Pours cloudy golden with flat head. Aroma of green grapes, grass, elderflower, strawberries, lime and spices. Taste is medium fruit tart with a mellow sweet (vanilla) finish. Light and smooth body with soft carbonation.

Btl from State milk bar AKA the LCBO - Wow! - super-nice sour with benefits. Hazy orange and funky with some bretty gauze, layers of lemony sourness verging on Gueuze-like tart, a bit apple-vinegar acetic, then it has these nice layers of tart and sweet (I would say uncommonly pretty, Andersonian) strawberry and gentle phenolic spice that really compliments from the white pepper. Aroma escapes the uncapping with some immediate berry, closer in there is some wet-log mushroom and cheese-rind funk amid the singing lemon-tart. Fussily-made and very refined, a Noble Babe of a beer like its namesake. A real treat as über-schmancy Sour Ales go, very glad I went in for this.

Rich orange color. No head. Smells like sour orange. Taste like spicy strawberry. Salty, sour finish with tart sugar.
