Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of mouth amusement. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Bottle. Pours a hazy golden yellow color with a small white head. Has a fruity sour tart strawberry aroma. Fruity sour tart honey and strawberry flavor. Has a fruity sour tart strawberry finish.

Craft Clerkenwell. Bruces UK Swan Song. Hazy gold beer, no real head. Palate is light, semi dry, mild fine carbonation. Mild lemon and a little Worcester sauce. Touch of red wine. Little floralness. Light dry finish. Overall slightly acid but its pretty drinkable.

Bottle sample. Cloudy pale yellow color, pretty much flat. Aroma of dusty perfume, white pepper, subtle rhubarb. Taste is softly sour peac, berry, straw, hay. Dry finish. Very nice.

Hazy deep blond color with frothy head. Interesting aroma, very fruity, plums, peach, vanilla, sweet oranges, orange flowers; wonderful. Soft mouthfeel, highly carbonated; fruity flavor, sour, a bit flowery; very well balanced.

Bottle shared at CBC Clerkenwell in London - big thanks to Kenneth. Pours cloudy pale gold with a scant, foamy white head. The nose holds light herbs, salt, lemon, wood and berries. Medium sweet flavor, moderately acetic, with pale bread, lemon, sweat. Medium bodied with fine carbonation. Sharp acetic finish, sweaty, with hints of wintery spices. Novel, but not terribly drinkable.

Bottle split at CBC Clerko, 15/04/15, thanks to Kenny. Hazed orange golden with a decent off white head that quickly dissipates. Nose is pissy straw, citric rinds, light tropical scorch, mandarin, earthy, light yeast. Taste comprises apricot, funk, pissy orange, earthy citric, pink berry tang, modest acidity. Medium boded, fine carbonation with a light acidic burn in a tarte fruit compote. Solid sour.

On tap @ Haven Gastropub. Cloudy golden orange pour with a finger of white foam. Aromas of tart strawberry, slight jam, and lemon juice. A bit of charred wood as well as a subtle pepper spiciness on the back end. Good sourness to the flavor. Lots of strawberry jam and tart strawberry candy. Mild lemon juice and dry, tart white grape. Slight tannic note of oak and pepper. Hints of lemon zest on the finish.
