Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Nice sour. Definitely taste the champagne yeast. Strawberries and honey are mixed in the finish. A lot going on here...

My Bottom Line:
Ripe strawberries, white pepper and citrus fruit aplenty meet white grapes and subtle brettanomyces in this complex and elegant Barrel-Aged Saison.

Further Personal Perceptions:
-A slice of foam tops the blond haze.
-Brettanomyces character is delicate compared to others of this ilk.
-Drinkability is high.
-Carbonation is fluffy and effervescent.

Bottle. Pours turbid orange-ish yellow with modest white head which soon recedes. Aroma is peaches and nectarines. Taste is peach sweet, apricot sweet, mildly acid, slightly vinous.

On Tap at PreFunk Boise Hazy dull peach light tan color. full lasting off white head. Musty and earthy fruitiness. A light sour touch and some bready wheaty notes at the end.

UPDATED: NOV 22, 2017 Bottle at The Willows. Hazy amber color, white head. Sour taste with citrus, tart, mango, ripe fruits, wheat and white currant. Sour finish with citrus, white currant, tart, ripe fruits, wheat and grass. Excellent sour ale.

Draft. Straw beer with a whitish head. Yeast and malt aroma with light Brett. Yeast and tart flavor with light Brett. Medium bodied. Malt and Brett lingers with light yeast.

Bottle shared with Frank. Aroma is strawberry, honey, wheat, slight tart, brett. Appearance is amber golden, white head, hazy. Taste is strawberry, brett, tart, honey, nicely sour, good. Mouthfeel is light to medium body, light carbonation, tart strawberry wheat aftertaste. Overall, it’s pretty good.

On tap @ Rattle N Hum. This is a cloudy orangeish looking one. It has a small whiteish quite lacing and definitely nice looking head on the top. on the nose it’s, oh, a little sour and wood tart with green small apples, pink pepper corn, wood and it’s also a little sour cherry stone-like. Yeah, like this. This is quite a different one for sure. Lots of tartness in the taste also. Wood, soir fruits. A little pineapple, small green apple. Lots of American vinegar here. It feels mild oily in the mouth and it’s just about average on the prickling carbonation. Quite refreshing, and definitely nice tasting. 19.06.2017
