Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

Hazy light orange/yellow color. Very faint aroma or citrus fruits, (either that, or my nose was not working that day). Not as fruity as a belgium, or as I expected.

TAR (2802) - Blue Ridge Mountains, North Carolina, USA - MAR 8, 2004
Draft: Lightly hazed pumpkin. Milky, sticky white head. Gorgeous peppery hopsack aroma dotted with citrus rind, flowers, honeyed malt, and a light yeast tone. Just a touch of toast, dough, and honeydew. Soft body with firm, zesty carbonation. Exquisite grassy, floral hop flavors right off the bat. Resounding herbal bitterness is livened by juicy melon and soft doughy malt notes. Mild, yet chalky and gritty Belgian yeast moves in to momentarily stabilize the hops while fluffing up the delicate malt flavors. Finishes with a light musty yeast note and lingering herbal, flowery hops. The brewer tells me this now contains an Orval yeast strain, which differs from a past Kölsch strain. And I query him how about throwing a cork and cage on a bottle-conditioned 750ml. Simply fascinating rendition of a Belgian hop behemoth.

BBB63 (6567) - La Porte, Indiana, USA - MAR 6, 2004
Hazy honey hue with small white head and minimal lace. The aroma hints of grapefruit, pineapple, toasted caramel malts, buttered biscuit, and earthy yeast esters. The taste starts piney but has good smooth balance. Some floral, nutty and spice tones too. The finish displays a sugarcake nature. The mouthfeel is slightly sticky and soft. Outstanding and unique, hard to fully grasp the minor complexities. Highly recommended.

UPDATED: MAR 28, 2004 Growler 2004: Red amber. Full, off-white, creamy foam. Fine, freshly cracked pepper, honey suckle flowers and orangey yeast make up an improved aroma. Bitter orange hops are still noticeable and are as balanced as I remember, but are better rounded with fruits and floral notes. An improved version for sure.
Draught 2003: Dark amber, small bubbly head. Sweet malty aroma, some grapes and pears. Nice orangey hop flavour that balances the malt nicely, well done.

Hoppy nose is not exactly like the hoppy noses that I'm used to from Goose Island ales, it's more hay and grassy-like than the flowery soft citrus aromas that they are known for. Very interesting sample that had a biting bit of alcohol eveident (even at only 5.7%). Green apple and pear in the sweet aftertaste. Strange but good.

UPDATED: MAY 22, 2010 From the beautiful glowing amber rises citrusy and peachy fruitiness...Balanced spicy hops support a dusty, lightly wild finish...Mustiness evolves into a comfortable aftertaste, creating a very classy Belgian-style Ale...

Billed as a Belgian Golden Ale, I found this to be quite enjoyable. The aroma contained a nice balance of dry grain malt and hop bitterness. The flavor was slightly sweet with apple, white grape, maybe a touch of sugar, and then a nice bitter hop balance in the finish. This is probably better than the 1800 Demolition and well worth trying.
