Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

UPDATED: JUN 16, 2014 Compared a 2010 and 2014 bottle side by side. Fresh bottle was a mostly clear golden orange with a persistent white head that settled to a film. 2010 bottle was very murky amber with same white head that settled to a ring and dollop. Aroma of 2014 has Belgian yeast fruitiness and some caramel sweetness along with slight coriander and phenolic note. 2010 aroma has tart apple and pear with a vinyl quality and hint of grain. Taste of fresh bottle has Belgian yeast fruitiness, clove, some toastiness and mild pepper. 2010 bottle has a mild tartness with some faint lemon and apple fruitiness, some grain and some cooked vegetable flavor. Mouthfeels are different also with new bottle being more creamy and full bodied while the older bottle is more crisp and carbonated with a lighter body. I much preferred the newer bottle to the older one and really enjoyed the 2014’s flavors. 2013 Pours a dark golden orange with big soapy head that sticks around and great lacing. Aroma of juicy fruit barnyard and clove spiciness. Taste starts with some sweet fruit like apricots, then the funkiness sets in mid palate with the clove and pepper. Decent amount of bitterness and a phenolic flavor. Medium bodied with an oily texture and lively carbonation. Finishes dry. Good but a bit too much of the phenolic flavor to make it a favorite. ---Jeremy H

2016 bottle from Total Wine. Pours and looks like a proper bottle conditioned Belgian. Yeast and spice aroma. Malty yeasty taste with tart stone fruits, hints of wood and nice dry peppery finish. Brett just beginning to show. Reminds me of Orval. A very good effort at a Belgian strong ale.

From Saveur biere. In Teku glass. Playing Pilgrim Academy. Not exactly a belgian pale, more like a saison, with nicely soft funk notes and some sweetness that still dont hide a champagnesque profile

355ml bottle. Cloudy, orangey, dark golden to amber colour with average, frothy, moderately lasting, minimally lacing, white head. Minimally bretty, funky yeasty, minimally bready, caramel malty and fruity aroma, hints of honey, gingerbread, honeydew melon, a touch of gooseberry. Taste is moderately dry, slightly grassy hoppy, minimally bready malty, hints of honeydew melon, a touch of gingerbread and clove; slightly creamy texture, minimally sweet-ish, sticky palate. Quite manifold and complex, somehow a bit to clean and engineer’d.

Bottle from 2016. Pours a hazy copper color with a thin off-white head. Aroma of pineapple, Brett funk, light sweetness, some biscuit/cracker, maybe a hint of hops. In the end the aroma was my favorite aspect of this beer. Flavors were dominated by yeasty spicy notes of banana and clove. Perhaps a bit of cloying sweetness. More Belgian yeast and a bit of sweet biscuit, some very light gentle bitterness. Medium body, perhaps even a touch on the light side. Gentle astringency, not completely dry. A great-sounding beer on paper, but it didn’t completely come together for me. But overall not bad! Maybe a lot of people like this, what do I know?

Dull and hazy coppery-orange color with a large head of slightly off-white foam. Has a tame sweet citrus and caramel aroma. Very rich caramel and spicy, earthy tones that make this one taste like a gingerbread cookie with it’s warming alcohol in the finish.

2015 vintage. Pours a nice clear golden amber, with good white head. Aroma of fruit and sugars. Well balanced between traditional Belgian sugars and hops, this is a very nice brew. Thumbs up.
