COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Bottle #16 from Beery Xmas. Slightly hazy pale golden pour with small white head, that totally disappears. Aroma is malty and yeasty, bhut with a strong clear element that I couldn't directly define, but will be the combination between the fruity element of orange and the wine ageing. Taste is totally the same, mild sweet & bitter, with a soury citric and vinous element, that nearly feels brett-like. This special sense makes this beer rather unique, although it also saturates in its strong presence. Rather strong carbonation. Less dry, more body and more sour than a regular saison.

18-12-2017; bottle; at home (bought at Saveur Bière, #16 of Beery Christmas 2017). The looks of the beer are fine. Not to special, but most Saisons don't look to special. The colour of the beer is a bright yellow. The beer has a slight haziness, but it is still possible to see trough it. On top of the beer a rather thin layer of rough white, fast collapsing foam is formed. Within seconds the foam disappears, leaving nearly nothing. The smell of the beer is that of a Saison...very barnyard like...not entirely for me. There are some hints of malts, but they are a bit covered by the other aromas. I smell some zesty hops, but loads of spicy and barnyard yeasts. It smells a little bit like zoo to me... The taste is comparable. Some sweet malts, bitter and slightly acidic hops, with some zesty notes, but most of the flavour is filled by yeast. Barnyard and a bit tart, with a spicy profile, including some peppery notes. Not bad, but not great either. The palate is avarage. Medium light body, a sticky and dry texture and medium high carbonation. The finis contains some zest, and spicy and tart yeasts. All in all, not my favourite beer, but definitely not a bad one. It doesn't seem to special to me.
