Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Bottle, Capital Grille. Hazy bright yellow, light and spicy aroma, orange peel and grains. Taste is crisp, light, more orange peel and lemon. Dry finish. "Elegant" comes to mind in describing this. Complex and subtle. Well done for such a light bodied beer.

Great looking beer! Tan-yellow and a bit hazy with a fantastic, thick, fluffy head and very nice lacing. Smells slightly sour, fruity and yeasty, earthy and pungent, spicy. Very nice. Tastes really good, pungent and earthy flavors accented nicely with apple, pear, a touch of oranges, and ample spices. Feel is quite rich and full despite a medium body. Very nice lingering spicy tastes. Lots of carbonation. Pretty dry finish. Drinks great. A terrific beer in every respect.

Bottle to snifter. Pours pale golden yellow with a quick white soapy head that dissipates to a thin collar. Aroma is fruity with a little spice. Taste is more fruit and spice with some yeast and a warming finish. Palate is medium and crisp with a dry warming finish. No complaints on this one.

Pours a pale yellow with a big, long lasting white head. Aromas of citrus, grass, leather, and wood. The flavors are medium sourness with hints of some sweetness. The carbonation is fizzy with a light to medium body. Overall a very nice saison. The Brett flavors meld well with the citrus. Great experience!!!

Pear, orange peel, vanilla and white pepper notes. Thin and watery texture. Slightly tart and dry. Not picking up the 20% wine barrel. Needs some carbonation. Good, but not great.

genius. So great. Tons of layers of enjoyment. Sweet, refreshing. Crisp like champagne. Awesome. Yeasty and citrusy. Pours a hazy yellow. The head dissipates fairly quickly leaving small circles of lace on the surface. I reinforce the tasting not above with the addition of the tartness. Wonderful brew

Light color with tart and sweet aroma. Tart flavor with noticeable carbonation but very balanced and a nice citrus finish. Palate leaves me wanting more.

Hazy straw gold with plenty of white head. Wonderful aroma of tart citrus, peach/mango/pear, light pinot, vanilla, mild funk, and yeast. Fresh citrus flavor, white wine, and peach. Nice dry finish with lingering tart citrus. Springy carbonation. Clean.

Sour spicy aroma. Similar flavour with some extra lemon sour at the end. Yum yum.
