COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

22oz bottle from Pick’s poured into a snifter. Bottled on 2/19/10. Been aging this one for a little bit. The cap popped off like a bottle of champagne. My glass is half full of just foam and it takes about 3 minutes to go down. Pours a cloudy gold with about (as of now) 4 fingers of frothy bright white head. Sweet yeast aroma with a nice scent of citrus. Slight aroma of clove also. Taste is lightly sweet and lightly sour. Taste of grapefruit and citrus. Medium bodied with a thick yet sticky texture. Lively carbonation and a long sweet finish. Overall, very good. I wish I could get more of this stuff.

bottle in a pint glass -pours cloudy yellow with thin white head and minimal lacing. Nose is pepper and orange/citrus. Aroma is lemon peel or some other peel and that Miller High Life smokiness. Taste is sweet and tart. Finish is medium-length. Aftertaste is stale. This is another bottle that was mislabeled - this should not say, "Belgian style ale" - but, "saison’ or at least humor me with something more vague like, "beer style beer." Too tart and disappointing.

Bottled. A very light yellow coloured beer with a good white head. Fubky in the mouth bit tart rather than sour. In fact it’sa bit too tart. good fubky lemony peppery hoppy nose. A bit too brash in the mouth with the lemon being too tart. Not my knid of saison.

Had this in a bottle poured into a pint glass. Foamy head in the glass. Very sweet flavor. Golden pale color. Smell is sweet grain. Full bodied. There is a slight hint of barley at the end. This was pretty good and fairly interesting for the style.

(bomber, 2009 vintage, sampled 7/12/10). Clear golden color. Large white head. Moderate citrus aroma. Moderate sweet honey/sugar flavor, with light pepper. Avg duration. Light alcohol finish. Thin/slick texture. Moderate to high carbonation. Fair lacing.

UPDATED: DEC 23, 2012 Draft at GI Clybourn on 8/4/11. Pours a straw color. Small white head. Spicy aroma. Citrus flavor. Really gives me a feel of champagne. Soft and mellow feel. Dry finish. Very solid beer. Only disappointment was that it left me feeling too much champagne and not enough farmhouse saison. Will need to rerate this one in future. 12/23/12 - Just drank a two year old bottle (1/29/11). This beer ages very nicely. Still definitely gives a champagne feel, but the belgian spices are more present then in the fresh draft version. Wasn’t sure how this one would hold up, but based on this experience I wouldn’t be afraid to age this one for quite awhile. It was still very much alive.

Location/Date:Bottle during Hurricane Irene on August 27th, 2011..bottle from Feb 2010.

Appearance: Pours a golden cloud.
Aroma: Sweet aroma, nearly pineapple-ish.
Taste: Didn’t really taste like a saison to me, more like a belgian blonde. Light hop, some citrus.
Palate:Can sense the "champagne"-ness of this beer from the second it pours.

Summary: Surprisingly, this beer aged well.

UPDATED: MAY 13, 2016 Vintage 2010. Pours a clear pale yellow with a huge billowy head. The aroma is funky, barnyard, cheese, Belgian yeast, orange, peppercorn. Very fragrant and complex. Light bodied and crisp with high carbonation. The flavor is equally complex. Starts out slightly sweet, lots of grass and straw, orangey citrus, banana, clove and peppercorn, and funky Brett flavors. Finishes crisp and perfectly hopped. This is seriously a damn good beer. Light and refreshing but extremely complex. I’m gonna get a few more bottles and sit on them for a few years, let that Brett do it’s thing. It can only get better. Vintage 2015 (5/13/16, in Chicago) Very similar to my deScription from 5 years ago. Grassy, funky, leathery brett notes. Crisp yeasty finish. Banana notes.
