COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Heathen (1500) - Wilmington, Delaware, USA - OCT 1, 2012
THOUGHTS: Very wine like in flavor and very champagne like in texture, but still recognizable as a saison. An excellent summer sipper that could probably stand upt to colder weather as well. It should age incredibly well. Less hoppy than many saisons, but there was enough acid and sourness to create great balance with the malt. TECHNICAL: Bottle. Poured a light to medium yellow that was almost glowing. It had excellent carbonation that constantly tried to rebuild the head, which was average to large, frothy, off-white and mostly diminishing. The aroma had light to moderate light bread and cracker malts; light herbal and grassy hops; moderate to heavy earthy, dusty and spicy yeast; slight funky yeast; and white wine. The initial flavor was slightly sweet, lightly acidic and slightly sour; while the finish was slightly sweet, light to moderately acidic; moderate to heavily tart and lightly bitter with an average on flavor and long on dryness duration. There was white wine, cracker, white bread, funky yeast, a little wood, apple, maybe a hint of vanilla, champagne, earthy yeast and dusty yeast. The light to medium body was very dry with very fizzy and tingly carbonation.

Pours translucent golden with a bubbly white head. Scent is light spices as well as citrus. Taste has the Belgian spiciness with some sweet citrus. Mouthfeel is effervescent, similar to champagne. Quality unique beer.

Pours a hazy golden color with surprisingly little head. Aromas bursting with citrus and funk...........but very one-dimensional. Flavors are fairly nice with citrus, mango and other fruit upfront with a mellow and slightly bitter finish. Medium-bodied. A solid Saison but not great.

Sour barnyard smells. Pours a golden orange haze with a very big tight white head. Giant lacing. Citrus and apricots and a solid yeast uderbelly. Constant champagne bubbles. Very nice saison.

12oz bottle from Westholme Stores, Goring. A straw coloured pour with a fast fading white head, and high carbonation; aroma of damp straw cut through with white grape juice; soft and creamy in the mouth with a tart fruity taste; and an interesting finish with coriander and white pepper providing warmth. The initial impression is that this is very sour, but the sharp edge wears off leaving a very pleasant beer.

From Saveur Biere. In Goose Island glass. At lunch, with maccaroni bolognesa. Noticeable yet elegant, non agressive funkyness. Notes of white grapes/wine and refreshing amarillo hops. Effervescent. Sounds good but the truth is that it took much long to finish, wasnt easy drinking.
