COMMERCIAL DESCRIPTION
Inspired by Frank Lloyd Wright’s grandiose vision for a mile-high skyscraper dubbed "The Illinois," we set out to brew an imperial IPA that would be similar in name and ambition. "The Illinois" Imperial IPA is dry-hopped with three of our favorite hops: Cascade, Meridian, and Citra. the result is a harmoniously hoppy ale with a flavor and aroma that is uniquely Goose Island.

12 ounce bottle into tulip glass, bottled on 3/27/2014. Pours fairly crystal clear orange amber color with a 2 finger dense light khaki head with good retention, that reduces to a nice cap that lingers. Spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation. Aromas of big grapefruit, tangerine, lemon zest, orange peel, pineapple, floral, grass, pine, caramel, bread, and floral/grassy earthiness. Very nice aromas with good complexity of bright citrus/grassy hops and moderate malt balance; with good strength. Taste of big grapefruit, tangerine, lemon zest, orange peel, pineapple, citrus rind, floral, grass, pine, caramel, light bread, and floral/grassy earthiness. Good amount of floral/pine bitterness on the finish; with lingering notes of grapefruit, tangerine, pineapple, lemon zest, orange peel, citrus rind, floral, grass, pine, light caramel, bread, and floral/grassy earthiness on the finish for a while. Very nice complexity and balance of bright citrus/grassy hops and moderate malt sweetness; with a great crisp malt/bitterness balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth, crisp, and lightly sticky mouthfeel that is nice. Alcohol is very well hidden with only a slight warming present after the finish. Overall this is a very nice DIPA! All around good complexity and balance of bright citrus/grassy hops and moderate malt balance; and very smooth and crisp to sip on for the ABV. A very enjoyable offering.

Pours a deep orange color with a medium sized foamy white head. Notes of orange citrus, apricots, brown sugar, and roasted sunflower seeds. Nice sticky mouthfeel.

Tap. Pours clear orange amber with a medium fizzy off white head that dissipates quickly with decent lacing. Aroma is light citrus, grapefruit, passion fruit, cat piss. Flavor is quite muted, lightly sweet, l light bitter. Light body, a bit oily. Highly drinkable.

On tap at Capitol Beer, Sacramento. Pours light amber with a rich beige head and a citrus aroma. There is a full-bodied caramel malt flavor with a very nice hop pr ofile. A bitter finish that sticks to the palate.

Nice crisp light copper body, perfect 2 centimetre tall tan head. Aroma of hops, malt, alcohol and more resinous hops. Medium to Full-bodied; Strong hoppy flavour with a good malt backbone, some pungent sweetness and a biting hop note. Aftertaste is very well rounded with a great maltiness, some light sugars, a lot of alcohol and a bunch of residual resin, grapefruit and piney hop notes. Overall, a very nice strong imperial IPA with a complex and somehow smooth finish! Great to try at the pub here in Whole Foods. I sampled this pint on draught at Whole Foods in New York, New York (Columbus Circle) for US$9 (way too much, but i’m paying for real estate).

July 31, 2013 - on tap at iTap Chesterfield during GI tap takeover. Copper pour with big head and lacing. Aroma was malty and both piney and citrus hops. Taste was a nice blend of the malt and hops. Finish was clean and this had a nice medium body with soft carbonation.

On tap at 7th West. Pour is a murky orange, tons of citrus hops on the nose and tongue. Creamy, sticky mouth feel. Not bitter, slightly sweet. Nice beer.

Darn fine, hoppy, bittering, DIPA. Complexity from caramel malts and nutty, toast notes. Pine, a whole forest of it, and lots of floral aromas. Leaning more pine/citrus on the palate. VERY long and very tasty. Also, it is this kind of wonderful glowing amber brown in the glass.

On tap at Independent Ale House. Pours golden orangish amber with white head. Aromas of grapefruit, pine, resiny hops, and some caramel. Flavors of grapefruit, pine, caramel malts, little toast, and good dose of bitter hops. Finishes with bitter hop burst ad residual sweetness of the caramel malts. Nice.

On tap at Madison’s pre-GTMW event - Pours clear amber with a thin off-white head. Nose is dank hops, real citrusy with a clean malt base. Taste has a little more sweetness and booze, with lots of dank mango and citrus hops. Medium-bodied and well-carbonated. Real nice--not sweet or hot.
