COMMERCIAL DESCRIPTION
Introducing the first release in our 100% Brettanomyces line, Les Grisettes. At under 4%, Les Grisette is a traditional style farmhouse ale brewed with Spelt, Buckwheat, Rye, and Oats, fermented on our house mixed culture of wild yeast. Grisettes were originally brewed for coal miners in the Hainaut region of Wallonia, Belgium. The name refers to the “gray” garments the women wore that delivered the beer to the miners. They were known as, “Les Grisettes.”

From tap. Pours heavily hazed yellow, small white head. Lots of yeast and funk aromas. Flavors are wheat, citrus, funky fruit, spice. Light bodied, medium-high carbonation.

500 ml bottle. Pours with a bit of a funky nose and then some nice fruit and yeasty notes. Some lemon. Refreshing. Nice.

Pale yellow, slightly translucent pour with thick, white rocky foam that slowly fades. Strong, tart vinegary notes in the nose with some must and malt around the edges. Peppery on the tongue, slightly smooth in the middle with some lemony touches toward the end. The combination of grains perhaps contributes to the body and almost slick texture. Medium body with active, sharp fizz and a sharp finish. The fizz accents the pepper well and gives the beer a good edge. The low alcohol lets the tartness last and the citrusy notes emerge. The saison is on the drier end and is well suited to hot weather drinking.

Hazy - murky matt medium yellow color with a average, frothy, good lacing, mostly lasting, white to off-white head. Aroma is moderate malty, pale malt, tart, citrus, lemon, lime, funky, moderate yeasty, soapy. Flavor is moderate sweet with a long duration, grisette yeast, lemon - lime, tart, funky. Body is medium, texture is oily to watery, carbonation is soft. [20161230]
