This rich holiday ale is perfect to warm away the winter chill. Nine full months of barrel aging deliver unrestrained oak and bourbon flavors. Tasty hints of chocolate, vanilla and tobacco round out the complex notes. The Holly King personifies the nature of the Green Man in all his winter glory.

Pour is a murky brown with a large tan head. Aroma is some caramel and plum with a slight oak vanilla. Flavor is a cigar tobacco with some treacle and molasses. The barrel is completely gone by now but the other components shine through. This had a slight dark fruit to it which if it was more pronounced it would have raised the score. My bottle said this was 9.8% so this is a definite winter warmer.

The oak barrel and bourbon flavors are too strong in this strong ale. It finished bitter, not smooth; there is a good malt flavor that is overpowered. Not bad, just not my preferred combination.

Bottle. Bourbon whiskey in appearance with a small head. Aroma was strongly oak with hints of vanilla. Taste is also of oak, vanilla and slight roasted grains.

Excellent beer! Poured with a nice fluffy long lasting fluffy cream colored head and some lace. Aroma is mostly toffee caramel and a bit of roast malt. Taste is where it gets really good had some of that coffee and caramel plus oak tobacco slight hint of bourbon sweet upfront bitter finish.

12oz bottle from dr.fabulous. poured a not so great looking murky orangey-amber with a very small super off white foamy head that almost completely dissipates. Aroma of toffee, leather, wet wood, light vanilla and brown paper bags. Flavor is the same as the aroma. Body is a touch hot on the backend and couple that with super soft carbonation intensifies the heat. Not bad though.

UPDATED: JAN 22, 2016 Draft. 2015/16 edition. Aroma is surprisingly thin, but flavors are huge honey sweetness (the bourbon?), vanilla and some nutmeg and cinnamon. The oak is here as the vanilla, but the sweetness drives the beer. The abv is well-hidden. A treat.

2015 Vintage (these 12 oz. bottles list the ABV as being 9.8%).

Appearance: Pours a muddled-looking mahogany-hued body with an inch of receding off-white froth. Just a meager bit of lacing on the way down.

Smell: An oaken, tobacco-hinting scent, then, some toasted bread and lightly toasted ground nuts and chopped dried fruits glazed with an altogether sticky, sweet-scented dark caramel and dotted with a little orange liqueur.

Taste: Chewy caramel squares with toffee candy and dark toasted breadcrusts, and, just when it seems a little sweet, you’re hit with a blisteringly quick shot of Cointreau giving some fast heat and bitterish citrus flavor to temper it. Woodsy oakensheilds, loose tobacco. Dried stone fruits and more of that cutting citrus. Warming, bittersweet finish.

Mouthfeel: Medium-plus body. Medium carbonation. Rather smooth, tongue-coating mouthfeel.

Overall: Sweet, luscious and delightfully warming, this. It would fit this Christmas Day in Georgia perfectly if it wasn’t so unseasonably warm at a tepid 70 degrees.

2014 edition. Faint smells of toffee and some of the barrel character. Beautiful deep Amber color. Tastes of some raisins, nutmeg, and the barrel leads to soothing coconut flavors. Long finish. Good stuff.

750 ml. Mostly clear, deep copper with a thin film of bubbles. Mild nose of toffee, tea and citrus. Flavors of toffee, vanilla, orange, whiskey and wood. Medium body has medium carbonation and a decent balance.
