COMMERCIAL DESCRIPTION
Robust and warming, this stout has hints of coffee and dark chocolate. A complex variety of roasted malts, and moderate hopping temper the pleasant sweetness of this brew. This special batch lurked in our cellar until our brewers felt it was worthy of its name.

Suttree (6578) - Knoxville, Tennessee, USA - JAN 28, 2008
On tap at Jack of the Wood. Black, with a thick brown head. Really pleasent aroma of coffee, charcoal and dark chocolate. Very full bodied and satisfying palate. Flavor is coffee at first, then a bit ashy and chalky, and some chocolate notes. Very tasty and satifying on a cold Saturday afternoon!

tap at brewery, they had this on cask as well, I had them give me a side by side, cask, and no cask. Subtle difference, cask was smoother fuller bodied, yet flatter. No cask was more carbonated and fluffy. Both poured the same and tasted the same, cask mostly affected the palate. pours a dark brown with mild caramel head. Hoppy presence in this stout, nice backgrounds of fruit and some smoke. good stuff by Jon Stuart to pump this out.

tronraner (2459) - Walland, Tennessee, USA - JAN 9, 2008
Draught at Jack of the Wood. Pours a dark mahogany black with small, dense tan head. The aroma is roasty with hints of caramel, mint, cola, and some ripe fruit. The flavor is hoppier than I expected, with a nice twang of earthy noble hops right off. Then there is some bitter chocolate, lots of nutty tones, and some roasty notes. It finishes dry and earthy with a slightly hoppy aftertaste. This one’s not too bad at all.

Flavor: sweet malt flavor with a tart edge, strange sweet character in the flavor, maybe lactose, vanilla, diacyitl, nice roasted character leading into a light bitter finish

Aroma: rich dark chocolate and roasted malt aroma with a touch of dark fruit
Body: creamy velvet body
Flavor: rich chocolate flavor, dark chocolate bitterness is balanced by a milk chocolate sweetness, nice plum character rises out of the sweetness
Overall: rating reflects cask version

Appearance: black, fine tan head, streaks of drippy lace
Aroma: dark chocolate aroma with a touch of dark caramel sweetness balanced by earthy hops
Flavor: rich dark chocolate flavor with lots of roasted malt, touch of milk chocolate sweetness, hint of fruity character, as it warms the chocolate gets richer, bitter finish rises out of the dark chocolate
Overall: so much better blended and balanced on cask plus the body smooths out the rough edges
