The beer looks amazing, just what I expected. The beer has a dark wintery aspect, like the name already tells you. On the eye the color of the beer is dark brown, almost black. When seen in a clear light, the color turns out to be reddish brown. The beer is very cloudy. The beer pours a nice layer of almond colored foam. The beer forms a lot of foam when in the bottle. After opening the beer formed so much foam, the bottle flooded with foam. The beer smells delicious. The beer has a very strong bitter smell. In the distance I smell a slightly sour aroma of wild yeasts. This aroma luckily isn’t very strong. Is is a nice contrast with the bitterness. The beer has a tiny smokey/roasted aroma. I also smell something oaky. The smell has a creamy touch to it, which makes it very soft, almost velvet. The smell also has a aroma of licorice. There is a beautiful harmony is the smell. My compliments. The beer also has a beautiful taste. The taste has a nice licorice like bitterness. The taste is strong and winter like, and together with the strong alcohol the beer is very warming. The beer also has a tiny hint of roasted barley and some oak wood. The flavor is a nice balance between the bittersweet licorice, the bitter tiny roast and a slightly sour yeast. The balance is perfect. The beer has a nice kick, it isn’t for people who went into heavy beers. The beer has a beautiful mouth sensation. The beer is creamy, has some nice tingling gas and has a pinching bitterness and sourness. It is lovely. I was really enthusiastic about this beer before, mostly because of the one year of aging in the famous caves of Valkenburg. The taste, aromas, appearance and palate accompany this perfectly. UPDATED: MAR 3, 2015 31/05/14, 15cl tasting @ bierfestival Maastricht. Brown coloured, beige head. Aroma and taste are big on chocolate and coffee, vanilla and a little smokey. Soft mouthfeel, medium-low carbonation and medium body. Re-rate, 750ml bottle at home. No head, low carbonation, nice chestnut colour. Dried fruits (raisins, figs) dominate nose and taste along with sweet and roasted malty tones, coffee, chocolate, liquorice, gingerbread, spicy. Red wine-ish too, with a dry finish. Further Personal Perceptions:
-A veil of foam tops the dark brown haze.
-The spiciness (nutmeg, cinnamon, cloves, etc.) feels tired.
-A light alcohol hit warms up the finish.
-Mouthfeel is rich and pleasant.
-Carbonation is a tad too soft for my liking in the style.
