Bottle. Pours cloudy yellow and still, though some bubbles form during the rigorous pour. Aroma is acidic lemon, farmyard notes and an earthiness. Basque pour still with a cloudy yellow golden color. Nose is funky basement must with lots of vinous white grape and lemony citrus notes wrapped around some tannic apple skin and soft apple flesh. Palate is full of bright acid, lemon some nectarine hints, sharp cheddar, tannic apple notes and a lingering fuzz quality that quenches your thirst nicely. Definitely rustic but nice ! Even if it were not for the lambics on draft it would have been worth a visit to Holy Grale solely to try this cider. Sampling a Spanish cider has always been a goal and until I can actually travel to the source this might be the closest that I get. Compared to its French and British siblings it carves out a unique niche that makes me want to try others.
Aroma / Appearance - A cloudy lemon body maintains a flat presence. Smooth apples, white wine, and dry vinegar scour the air. By the standards of other ciders that I’ve sampled on draft it definitely adheres to the dry end of the spectrum rather than the candylike experience of a typical American cider.
Flavor / Palate - White wine paired with fresh slices of ripe apples warm the mouth and tongue. A polished smooth profile bursts with flavor. The experience remains drinkable despite being dry and acidic. It would be interesting at some point to try this in a bottle to see it changes at all.
Bottle. Virtually no head. Body is hazy light to medium yellow. Aroma is lightly yeasty (barnyard), with notes of apple skin, lemon zest, plastic, alcohol (slightly fusel - bug spray). Flavor is moderately sweet, moderately acidic. Finish is lightly sweet, moderately acidic. Medium body, watery texture, soft carbonation (almost none), lightly to moderately astringent.
Not too bad but it doesn’t really offer too much by way of enticement or uniqueness. The plastic and fusel notes aren’t strong, but make it hard to really enjoy the nose. Good flavor balance though. crossovert (12927) - Chicago, Illinois, USA - JUL 17, 2016

750 ml bottle. Pale golden body with sediments and almost no head. Aroma is fresh apple with a little hint of wood. Flavor is quite mild, dry and acidic apple, rather moderate in barnyard and funk compared with other Basque sidras. Still nice and refreshing, a bit thin body but a great refreshment. Bottle. Hazy hay yellow liquid with minimal white head. Aroma of red apples, light barnyard, bread wood, lemon and juicy green apple. Taste is very light sweet and light to medium sour with notes of apple skin, juicy green apple and light wood. Medium bodied with low to medium carbonation. Really nice, complex and juicy. In short: bitter cider.
Pouurs hazy greenish golden with little white head, vanishing. Little lacing. Tart, leathery, wet, apple nose. Light body, high carbonation, crispy texture. Taste is fruity, tart, "volatile acidity" that vanishes fast and leads to a more bitter finish, dry, astrigent. Refreshing and enjoyable.
