COMMERCIAL DESCRIPTION
A well executed Wing Over is smooth and dramatic. This beer is no exception. Wing Over is a big, complex, American-style Barleywine featuring two English caramel malts and four American hops. Wing Over’s character is enhanced by dry hopping and then aging the deep amber liquid for six months in charred oak rye whiskey and bourbon barrels. Spicy aromas spill from the glass: rich caramel, citrusy hops, bourbon and oak. Layered flavors of toffee, vanilla, brown sugar, spice and rye whiskey lead to a warm and slightly bitter finish. This is a strong ale, meant to be sipped, savored and enjoyed.

750 ml caged and corked bottle shared. 2016 vintage. Clear dark amber brown with beige head. Aromas of caramel, toffee, floral, oak. Tastes of caramel, toffee, floral, oak. Medium body with a dry finish. Barrel character pretty subdued, maybe faded from age.

Rating #2784 - 2016.08.29 - Bottleshare at CBI. Thanks Tim. Hazy orange-brown pour, bubbly head, not much lacing. Aroma is bourbon vanilla, alcohol, pastry dough, burnt sugar, orange rind. Taste is an alcoholic hoppy punch, lots of IBUs tempered with sweetness, and a ton of alcohol on the palate, but not thoroughly undisguised. Glad I let this 2015 sit, because still hot as fuck at 18 months.

Draft. 2014. Aroma of toffee and brown sugar. Flavor is lots of ripe plum, toffee, a bit of caramel. The rye and oak (which lingers on the palate with every sip) fends off sweetness and booze. Supremely sophisticated.

Nocturne (2238) - Cheshire, ENGLAND - AUG 25, 2016
2015 bottle. Dark amber shade. Finger of head. Aroma of toffee, oak, butterscotch, vanilla, brown sugar, raisin. Chewy texture with more toffee and red fruits. Quite dry. Mouthfeel is a bit flabby, and the heat can be distracting, but it’s pretty nice stuff.
