COMMERCIAL DESCRIPTION
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.

Oh man this stuff looks like happiness in a glass! I wish I had the wherewithal to age some of these for decades. Its deep red with white fizzy foam. The aroma is spritzy, fruitily acidic, a little bit of chalk, fresh. The flavor is lightly sweet, acidic yet calming, its like the Platonic form of what a cold tart cherry should taste like, the finish reminds me of cherry skins. Theres an undertone of horsey funk too. Mouthfeel is light and fizzy. This is delightful, just the beer I wanted today.

375 mL bottle. Pours a deep, kinda murky red. Has a collar with big discrete bubbles. Smells of sour cherries, a little bit of vinegar, and some oak. Tastes really sour. Vinegar. Some lemon. Sour cherry. Intense, deep sour finish. Medium body with low carbonation. Too sour, but its got a pretty good flavor.

Cherry and lots of grapefruit lambic bretta. Wild vibe like naked motorcycle rides. Opaque ruby pour without any head or lacing. Tangy and slightly acidic finish. Bottle pour at Sovereign.

375 ml corked and caged bottle, 2015 vintage. Served in a Prairie Artisan Ales lambic glass, the beer pours a slightly hazy reddish color with not quite an inch light pink head that fizzled away kinda quickly. Not much lacing at all. The brew smells like tart and sweet cherries, oak, and some funkiness. Taste is similar to the aroma, with tart cherry, oak, sweet cherry, funk, vinegar and lemon flavors all noticeable. Its pretty tart, more than I expected since I thought the aroma had a good amount of sweetness. Mouthfeel/body is light/medium, its easy to drink and has a low amount of carbonation. I liked this brew, I enjoyed the tart fruity flavors. Definitely worth picking up!

375 ml bottle from Bottles & Bitters at Sloans Lake. Light hazy reddish appearance with minimal head. Aroma of sour cherries, light barnyard funk and a hint of oak. Similar flavor, moderately sweet and moderately sour with a medium body and a lingering finish. Nicely balanced and enjoyable overall.
