COMMERCIAL DESCRIPTION
In the fall in the appalachian mountains, elderberries hang low and ripe. Traditionally, this beautiful fruit was harvested for elderberry wine. Inspired by tradition, we have infused our ten month bourbon barrel aged cider made from heirloom apples grown in the greenbrier valley with just the right amount of elderberries. The result is a wonder of crisp fruity perfection.

Sampled at the RBSG grand tasting. In my tasting glass this was somewhere between pink and purple (violet?) with a small head of pink tinged foam. Nose is apple and some elderberry. Medium to full body. Flavor is tart apple with sweet not tart elderberry which make for an interesting combination Good.

Bottle at RBSG 17 Grand Tasting, thanks to Jeremy. Light, clear violet, head is more pink than purple. Berries on the aroma, flowery scents too, apples. Elderberries take off some of the cider tartness, nice fruity flavors, light considering the ABV. Not much evidence of the BBA.

500 ml bottle poured into a snifter. The cider is a clear purple color. Vibrant. The aroma has a strong berry character to it, which masks the apple crispness, but doesn’t mask the tartness, which I enjoy. There is a bit of earthy funk in the cider, that I have found in the other offerings from this cidery. Medium body and slight carbonation.
