UPDATED: JUN 30, 2015 Had at the brewpub. I can’t decide if I am not a fan of wit beers or if many of them are not made to my liking. I need my wit beers to have a touch of tartness and play down the soapiness that is sometimes associated with them. I wasn’t so big on this. Devil in the wit city. Sampler at the hay... Pours a cloudy and
muddled orange juice pour with a rhin milky white head... Banana and
orange in the aroma, a little bubblegum... Flavors are a little musty
with an oddness at first but then moves to more banana, bready and citrus.
Very light bodied, not completely clean tasting.

draft at the pub. pours murky muddy yellow white head. really looks bad. nose has a lot of ginger, tart yeast to it. flavors have a unique balance of ginger and lavender florals. thin but pretty good stuff. chibuck (3513) - Chicago, Illinois, USA - MAR 31, 2011
On-tap at the brewpub, served in a taster... This is actually one of the ugliest beers I’ve ever seen, it looks like a yeast slurry. An ugly opaque yellow, milk mixed with a wit. The head is chunky and looks yeasty... The aroma is good but a touch too sweet, honey and wheat, some orange peel and bread as well... The taste is unbalanced and a bit watery. Again very sweet, lots wheat and orange peel, a little hops come through as well. Easy to drink but I’m not a huge fan. NobleSquirrel (3438) - Chicago, Illinois, USA - MAR 24, 2011
Draft at Haymarket. Pours a quite pale yellow, quite cloudy and nice looking. Nose is sulfury and fruity, light phenolics and floral notes. Herbal and bready. On taste full bready component, along with noticeable herbal additions, chamomile perhaps? Kind of smacked in the face by the floral. Would like more citrus and elegance. Interesting interpretation for sure, just a bit too wheaty. Good.

UPDATED: MAR 21, 2011 Draft on tap at the brewpub (Chicago, IL). Me and Drew saddled down at the bar. Pours a real murky pale yellow hue, a frothy bright white head dies to an ok lacing film. Aromas are straight wit, powerful orange rind and touches of spicy coriander, spice, and yeasty bread dough. Initial is light bodied, bready wheat malts and vibrant orange peel, touches of mellow coriander, wheat bread, and crisp cereal grains. The orange peel dies out further down into it, crisp cereal grains with touches of citrusy orange and mellow coriander. Mellow and sweet, crisp and sessionable with wheat bread, dry and crisp with orange rind. Mellow and sessionable, but not complex. Does the job, solid Wit I’m happy is a Chicago local.
