"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottle @ You’ll Never Walk Alone, Kolding. Pours hazy very dark brown with airy tan head. Clear aroma of malt and roast, with notes of berries. Bitter, roasty and hoppy flavour with soruish notes of berries and touches of coffee, yeast and malt. Roasty and dusty aftertaste. Decent as such and quite good for the style.

Bottled. Black with some mahogany and red shade, Big light brown head, very persistent. Almost no aroma at the nose. in mouth is full, oily, soft and well balanced: dark malt, caramels, toasted grains, nuts, dark fruit and a hint of liquirice. A lightly bitter close up, quite short. Lighter and fresher than typical dark ales but quite good.

Bottle. Pours dark brown with a beige head. Aroma of dark berries, elderberries, dark sweet malts, fresh dates, caramel and raisins. Taste of tart dark berries, dark sweet malts, slight herby spice to it and dark dried fruits.

From William's Brewery's 4-pack that's available at my local shop every Christmastime. I drank and enjoyed it last year, but decided to try it again and give it a review. Really enjoyable, though if I remember correctly, the pine one was my fave last year. I drank this chilled, in a room-temperature glass, with no adornment, though with a dinner. I'll pick the pack up again next year for sure.

330ml bottle from LCBO. 6.5% alc/vol. Pours a deep ruby brown colour with one finger of lasting head. Aromas of coffee, booze, and some fermented fruit. Taste matches the aroma with a mild chocolate finish. Medium bodied with moderate carbonation. Interesting brew.

Brune très sombre avec une mousse ivoire fine et évanescente. Nez sur des malts à whisky légèrement tourbés très prononcés et du fruit, en l’occurrence du sureau dont les arômes sont clairement tangibles. On sent déjà le côté terroir de ce breuvage qui s’éloigne des standards des bières actuelles ! On sent aussi quelques notes acidulées plutôt vivifiantes et des notes de pomme verte, de poire, de prune, d’abricot à peine mûr... Je décèle aussi un côté Doppelbock assez surprenant. Je retrouve ce genre de flaveurs dans la Samichlaus qui pourtant n’a rien à voir ! La texture est étonnamment souple, très huileuse et douce en tapissant véritablement la bouche avec une sorte de film. Vraiment surprenant et très agréable. Le côté fumé avec ses petites notes de bacon est vraiment équilibré, l’alcool fait son boulot avec ses 6.5% abv sur mon exemplaire tandis que la carbonatation est anecdotique. L’amertume est sobre elle aussi et laisse pleinement s’exprimer le caractère malté de ce breuvage. Le final est sur le fumé, la tourbe, le chocolat noir, le café, ce côté caramel brûlé, le bois et le cuir qui nous replace pendant un moment sur un champ de bataille des Highlands Ecossais. La longueur est moyenne, pas impérissable, tandis que le fruit qu’on décelait au nez a disparu en bouche. Non, ce n’est pas dans sa complexité aromatique que j’apprécierais principalement cette bière, mais bien pour sa texture que flatte le palet et la langue. Si les druides savaient déjà faire ce genre de bière, c’est déjà pas mal !!! Bouteille 33cl, Boissons du Monde, Saint-Egrève.

very dark and black appearance, some glimmers of light present with a gentle brown/tawny glow. quickly dissipating head to soft-speckled dil;m which leaves a nice coating. malty/grainy aromas with dark fruits/plum after initial malty hit. slight wateriness to aroma. intriguing taste; liquorice and malts, dark fruits and a herbal quality. short finish with a dancing off-bitterness that lingers gently. not as thick-feeling as would have liked. feels watery, but not unpleasantly so. limited fizziness, limited stickiness. has a slight drying/puckering quality.

Barwa czarna, z brunatnymi przebłyskami. Piana mało intensywna. Aromat przypalonego karmelu i soku z czarnego bzu. W smaku lekko słodkie, palony karmel, pumpernikiel, ciemne pieczywo i lekko bzowy posmak. Goryczka niska, ziołowa.

Pours black with a small tanned head.  Aroma is roasted oats and dark fruit. Roasted almost smokey malts flavour with a smooth earthy finish. Interesting and complex style, I really enjoyed it.
