"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

UPDATED: FEB 10, 2012 12 oz pours black with a tan head. Aroma of Chocolate, yeast, and a bit of black malt with mild sweetness and a charred hint of roasted grain, mixed with fresh elderberries and grassy, slightly floral hops. Taste of Chocolate and roasted malt with notes of coffee, cinder toffee, and a lingering toasted grain undertone with some oat sweetness.

Brune trs sombre avec une mousse ivoire fine et vanescente. Nez sur des malts whisky lgrement tourbs trs prononcs et du fruit, en loccurrence du sureau dont les armes sont clairement tangibles. On sent dj le ct terroir de ce breuvage qui sloigne des standards des bires actuelles ! On sent aussi quelques notes acidules plutt vivifiantes et des notes de pomme verte, de poire, de prune, dabricot peine mr... Je dcle aussi un ct Doppelbock assez surprenant. Je retrouve ce genre de flaveurs dans la Samichlaus qui pourtant na rien voir ! La texture est tonnamment souple, trs huileuse et douce en tapissant vritablement la bouche avec une sorte de film. Vraiment surprenant et trs agrable. Le ct fum avec ses petites notes de bacon est vraiment quilibr, lalcool fait son boulot avec ses 6.5% abv sur mon exemplaire tandis que la carbonatation est anecdotique. Lamertume est sobre elle aussi et laisse pleinement sexprimer le caractre malt de ce breuvage. Le final est sur le fum, la tourbe, le chocolat noir, le caf, ce ct caramel brl, le bois et le cuir qui nous replace pendant un moment sur un champ de bataille des Highlands Ecossais. La longueur est moyenne, pas imprissable, tandis que le fruit quon dcelait au nez a disparu en bouche. Non, ce nest pas dans sa complexit aromatique que japprcierais principalement cette bire, mais bien pour sa texture que flatte le palet et la langue. Si les druides savaient dj faire ce genre de bire, cest dj pas mal !!! Bouteille 33cl, Boissons du Monde, Saint-Egrve.

very dark and black appearance, some glimmers of light present with a gentle brown/tawny glow. quickly dissipating head to soft-speckled dil;m which leaves a nice coating. malty/grainy aromas with dark fruits/plum after initial malty hit. slight wateriness to aroma. intriguing taste; liquorice and malts, dark fruits and a herbal quality. short finish with a dancing off-bitterness that lingers gently. not as thick-feeling as would have liked. feels watery, but not unpleasantly so. limited fizziness, limited stickiness. has a slight drying/puckering quality.

Barwa czarna, z brunatnymi przebłyskami. Piana mało intensywna. Aromat przypalonego karmelu i soku z czarnego bzu. W smaku lekko słodkie, palony karmel, pumpernikiel, ciemne pieczywo i lekko bzowy posmak. Goryczka niska, ziołowa.

Pours black with a small tanned head. Aroma is roasted oats and dark fruit. Roasted almost smokey malts flavour with a smooth earthy finish. Interesting and complex style, I really enjoyed it.

330 ml bottle bought at CitySuper in Habour City, Tsim Sha Tsui.

Looks: Clear, deep blackish red colour; Less than one quarter finger head with residual soapy white foam which fades in 15 seconds; Good sticky lacing with near zero carbonation.

Aroma: Quite fragrant dark malt, with milk chocolate, light roast, caramel, strong sticky toffee, cream, light dark berries, sugar, alcohol and light grass.

Taste: Mid to light sweet fair dark malt, with caramel, light toffee, light chocolate, light berries, fair cream, light floral, light molasses, biscuits, lemon, medium bitter hops and grass.

Body: Mid to light body. Thin and slightly slick palate.

Mouth Feel: Fair dark maltyness in a slightly sluggish background. Very watery feel with caramel and toffee, everything else are pretty light from berries, cream, floral, sweetness. Quite dry with lemon to round. Barely okay.

Hoppiness: Light grass in nose. Light floral, lemon and grass in taste; Bitterness is fair for an abrupt, mid to low astringent caramel fruity finish.

After Taste: Quite dry. Light fruity and quite easy to mouth.

Comments: After the nice Alba, this got to be an anti-climax: intriguing chocolate aroma but too low-fi, too thinned for chocolately malt taste to impress, with too light berries and mild hopiness. Drinkable but hardly impressive.

Pours up a deep dark red with a foamy light brown head. Aroma is biscuit, caramel and dark berries. Taste is dark berries, some caramel, roasted malts. It is a little sour.. Medium body, low carbonation. Smooth.

Bottiglia. Al naso arriva il luppolo, poi il frumento ed infine lorzo. Il cappello di schiuma a bollicine fini e carbonazione bassa resiste poco e si fa ricordare per un bel pizzo sul vetro. Il colore scuro impenetrabile. Il corpo strutturato ma duttile e presenta nuove sfaccettature. Lamaro deciso. Lintensit gustativa elevata. La persistenza gustativa buona. Il gusto godereccio e voluttuoso. Il finale felpato, lungo, pulito e complesso. Il retrogusto intenso e persistente. Laroma in bocca riporta sentori di miele, frumento, orzo, pane tostato, resina , sambuco e mirto.

Dark brown color with red highlights and tan head. Aroma has roasted malt, some dark fruits and a hint of liquorice. Taste starts roasty and malty, quite bitter with some earthy spices on the finish. Light body with medium carbonation. Quite interesting beer, easy drinking and it has a quite unique flavor.

bottle @ Jungle Jims / Cincinnati OH --- Aroma of malt and light berry. Opaque black color, deep tan head that drops to the rim, strings of lace. Taste is malt with berries in the background. The swallow offers light carbonation along with more berry. A lightly bittered finish keeps the balance. Light, somewhat still, but, agreeable.
