COMMERCIAL DESCRIPTION
This year’s Siren Noire Imperial Chocolate Stout has been revamped. We’ve aged it for three weeks in bourbon barrels, which gives the beer darker notes of raisin and fig. We’ve also tripled the amount of chocolate nibs and added vanilla bean. A mix of dark malts gives Siren Noire a well-rounded body that is decidedly chocolatey—but without being extraordinarily sweet. Mt. Hood hops contribute a fruity hop profile, with notes of black currant.

[ As Heavy Seas Siren Noire ].
Clear dark black brown color with a average to large, creamy - frothy, good lacing, mostly lasting, light beige to beige head. Aroma is light heavy malty, roasted, chocolate, dark chocolate, moderate vanilla beans. Flavour is light heavy sweet and moderate to heavy bitter with a long duration, chocolate, vanilla, bourbon. Body is medium to full, texture is oily, carbonation is soft. [20140315]

Draft. Pretty much black, huge brown head, solid lacing. Aroma of vanilla, dark milk chocolate, subtle whiskey. Taste is rich vanilla, brandy, cocoa, coffee. Nice.

Tap at the Ginger Man, NYC, 18/05/13. Mid black with a thin tan head. Nose is chocolate, light smoke, mineral notes, sugars, dark fruit. Taste comprises dark toffee fudge, chocolate, figgy pudding, dark malts, dark fruits. Full bodied with fine carbonation. Good stuff, easy drinking the alcohol never interferes.

Bottle. Poured black color with an average creamy tan head that mostly lasted with good lacing. Moderate to heavy roasted malt, chocolate, bourbon, woody and small alcohol aroma. Medium to full body with a rich smooth texture and flat carbonation. Medium to heavy roasted sweet chocolate cream and bourbon flavor with a medium to heavy sweet smooth finish of moderate to long duration. Another solid brew.

Pours a very dark brown color with a large foamy tan head. Good head retention. Aroma of strong whisky, chocolate, wood, vanilla, earthy hops. The taste is roasted malts, whisky, citrus hops, chocolate, dark fruits, vanilla. Medium bodied. Solid, but slightly off-balance and a tad bit cloying in the finish.

Cask version at Winking Lizard’s 3rd Annual Real Ale Fest (03/26/11): Pours brownish-black with amber around the edges. Medium thin light beige head that diminishes quickly, and spotty lacing. Aroma of roasted malt and oak. Medium to full body with flavors of roasted coffee, oaky bourbon and malt. The finish is roasty with a malty aftertaste. Above average overall.
