UPDATED: NOV 12, 2013 375ml bottle pours hazy semi-clear gold with small 1 finger head. Nose is funk, barrel, tart golden apples and hay, straw. Mouthfeel is so well balanced, delicate but not thin, just the right amount of moderate carbonation. Taste is bright tart apple skin, funky, woody, hay, citrus, grape, barnyard. Finish is complex white grape, oak, earthy, barrel notes. Complex, elegant, delicious. Wonderful!
375ml bottle poured into a Hill Farmstead oversized wine glass.
A~ glowing tangy orange with a gushing head and slight lacing.
S~ spicy saison yeast and wine barrel funk up front. Followed by nice citrus and cherry aspects.
T~ a lot like Art with a thicker cherryish lambic undertone. Other than that it pretty much follows the nose. spicy pepper saison yeast up front, citrus rushes the palette with darker tart fruits, all followed by amazing funk. As it warms up a lot of oak starts to come out.
M~ very well carbonated, just where I like a saison. Smooth and extremely refreshing.
O~ I think this will be really amazing with some age. The CD series seems to get better with 6 months to a year of age but no more than that! Overall a very amazing blend as always, here’s to more Civil Disobedience! ClarkVV (6862) - Boston, Massachusetts, USA - FEB 21, 2017

Lightly-to-minimally hazy, bright goldenrod-bronze body shows moderate carbonation and an initially medium-sized, white head that recedes slowly to a ring.
A complex mix of light malt sweetness (honey, hints of bread and other light grain), light citrus (oranges, lemon pulp) and what probably were a lot more aggressive acids, comprise the nose, which does a great job of integrating Art and Cantillon. Light acetic notes and plentiful lactic notes certainly show an American sour ale character, but the Cantillon blended in helps soften things considerably and deepen the funk, as well. No alcohol or flaw. Grows fruitier and fruitier as it warms and breathes with light wood emerging and more soft malt.
Honey, soft aceto-lactic character and very fruity brett comprise the flavor, with lots of strawberry, apple, light lime and cherry. It’s boisterous, soft, woody and quite funky with remnants of much heavier/sharper acidity. Seems to really have softened and homogenized as its aged, with no detriments. Tight, soft, natural carbonation and a malty, well-attenuated texture with no alcohol or flaw. Very interesting and glad I got to try it.
375ml bottle for on site consumption at Hill Farmstead. Pours a slightly hazy orange gold. Beautiful foamy head with tiny smooth carbonated bubbles and great lacing. Smells winey, oaky, and sweet, Slight fruitiness. Tastes winey, fruity, oaky, very smooth and acidic with a small tartiness. Big mouthfeel for a sour. Very good. I enjoyed this one. 375 mL bottle poured into a snifter. Bottled 7/2013. Originally reviewed 4/28/2014. Pale orange. Hazy body. Nice white head. Thick collar.
Wine barrel saison is immediately prevalent in the nose. White wine. Oak. A little bit of yogurt lactic aroma. The lambic pushes through in the back. White pepper. Some hay and funk. Lemony acidic aroma.
Taste has that same lactic sourness. White wine right up front. Oak and some funky cheese flavors. Grainy malt. A little bit of sweetness in the back. Lingering oaky finish. It isn’t crisp, but it is light. Well carbonated with a pleasant sourness.
Superb. I never quite got past the lactic sourness, but nonetheless, I really loved it.

Bottle: Beaming golden color with soft amber at the edges. Hazy, mostly opaque throughout the center with a dense radiance. Foamy, bubbly white head that settles quickly on top. Big time vinous aroma. Huge Pinot Grigio nose; very dry with tons of white grape, oak, soft tannins, slight barnyard must, & a sharp acidity nearing the back-end. Flavor is tart; lots of lemon, under-ripe green apple, sour grapes, loaded with a nice, dry & vinous oak profile running front to back. Mineral water, soft hay, stone fruit skin, white wine, dry oak, & a very mildly acidic finish that never gets overbearing. A touch of funky lychee lingers in the end. From short notes...
Clear yellow straw pour with no head. Nose is white wine and bitter tannins, citrus, and nice Brett's. Still some diactyl and the distinct HF BA saison character. Lightly sour and dry end. Bottle @ SONLTB tasting. Hazy yellow colour with a small white head. Smells sour, herbs, yeasty. Tastes sour, brett, fruity, yoghurt, peach or apricot. Medium body, nice crisp carbo.
