Had this fresh but this is a rating for the 9 month aged serving at the saison festival. Pours a cloudy golden color with a fair amount of head, leaving lacing. Smells sharp of funky tartness. clean barnyard with a bready malt. House saison esters. taste begins with a tart kick and biscuit bready malt with funky clean esters. Mouthfeel is medium light with moderate carbonation. Overall one of the stand outs of the day.

Draft at the farmstead, aged 9 months. Cloudy yellow, fluffy white head. Aroma of farm animals. Taste of sourdough bread. Nice.

En fût. Verre de 10 oz dégusté au Siboire (Sherbrooke, QC). Arôme: Odeur d’agrumes et de céréales avec une pointe de levures. Apparence: La couleur est blonde légèrement voilée. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de céréales et d’houblons avec une pointe d’épices. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement minérale. Moyenne effervescence en bouche. Légère présence de zestes d’orange en arrière goût. (Rating #3621)

Appearance : Hazy amber with a small head. Lots of lacing.
Aroma : Awesome rustic yeasty notes. Great herbal hops. Light citrusy notes.
Taste : Great rustic yeast with citrusy and herbal hops. Light tartness. Light spices on finish.
Overall : Very nice one. Very strong rustic yeast on nose which I enjoy a lot. Nice herbal hops too. Taste is also quite rustic and yeasty. Light spices on finish may come from rye. Nice balance between yeast and hops. Really well done and quite authentic. Very drinkable too. Another great drinkable low abv beer packed with flavors ! Impressive.

UPDATED: SEP 29, 2014 My Bottom Line:
Intricate and refreshing, this Saison’s citrusy fruitiness swirls around and within firm cereal flavors, leading to a levelled resinous bitterness and much rejoicing.

Further Personal Perceptions:
-A ring of foam circles the orangey blond.
-A tropical fruit edge recalled passionfruit at times.
-This is not one of those rotund rye beers. Dryness is exemplary, increasing drinkability.
-The mouthfeel is light and effervescent; a light pillow to lean on.

In short: A super nice rustic and fruity rye Saison
How: Tap on location directly at the brewery
The look: Almost clear blonde body topped by long-lasting small white head
In long: Nose has nice rustic Saions yeast, rye cereals and notes of tropical fruits. Taste is creamy honeyed cereals, fresh rye bread, classic rustic Saison yeast signature, apricots, pineapples, bananas. In the finish I can feel the dryness of a typical Saison but this one appears more dry-hopped and so it adds a mild juicy fruity bitterness. Not my favorite Hill Farmstead Saison (I preferred Arthur) but nonetheless another extremely satisfying beer from my new favorite brewery. I wish all brewers would brew beers as if all their customers are violent psychopaths who knows where they live.

Aroma: The nose is fairly fruity with some grass hops, spice, and some funk
Appearance: It pours a hazy golden-orange pour with a white head
Flavor: The taste is medium sweet and slightly less bitter, similar notes to the nose
Palate: The body is mediumish, with a solid mouthfeel, and fairly high drinkability
Overall Impression: Rating # 1600 for this guy, that’s double 800 for those who enjoy really simple math. I liked this one, it was a pretty solid beer. I’m fairly new to the this brewery (this being the 2nd one I’ve tried), but after Arthur and this one, I’m becoming a fan.

Sampled from the tap at the brewery. Poured a near clear gold with a white head that lasted throughout the beer. Aroma was complex with floral, spice and light fruit notes with backing notes of citrus and rye. Flavor was similar with light fruit really coming out in the start, which was joined by floral and citrus notes and backed by spice and rye.

UPDATED: JAN 5, 2011 On draft at Ginger Man. Somewhat hazy golden copper pour with a small off-white head atop it. Fruity aroma of oranges, apricots, and banana with spice and sweet malt, only mild funk. The flavor is rather estery and on the sweeter side for the style. Apricot and tangerine are big, with bready malt notes and a slight funky earthy aspect. Medium-plus bodied with a little less lively carbonation than I like in this style. Good but not as good as others I’ve had from Hill Farmstead.
