COMMERCIAL DESCRIPTION
Earl (1911-1985) was our grandfather’s brother; Hill Farmstead Brewery rests upon the land that was once home to him and his 13 siblings. In his honor, this Stout is crafted from American malted barley, Flaked Oats, English roasted malts, American hops, Organic Guatemalan Coffee, our ale yeast, and water from our well. It is unfiltered and naturally carbonated. A silhouette of coffee and malt - an embodiment of complexity and drinkability, this is the ale that I dream to have shared with Earl. 7.2% ALC/VOL 18º P Ingredients: Pale, Caramel, and Chocolate Malt, Roasted Barley, Columbus hops; Ale Yeast, and our Well Water.

Sample at The Trillium and Tree House-tasting in Kville, Göteborg. Extra bottle. Opaque black beer with a nice lasting beige/brownish head. Roasted dark chocolate and coffee aroma, licorice, cocoa powder, soot, licorice, some tar. Roasted chocolate flavor, cocoa powder, coffee, espresso, soot and tar, well hidden alcohol. Full bodied, very well balanced coffee style stout.

Bondurants, NYC tap: pours black with a dark tan head. Aroma is chocolate, vanilla, coffee, hops, roasted malts, and hints of smoke. Taste is rather bitter for a stout, but not in the black IPA way. Very roasty. Hints of vanilla. Finish is nice and does not linger too long. Heavy on complexity and flavor. Quite nice.

Pours pitch black with a beige creamy head. Aromas of dark chocolate, dark coffee, dark fruits, liquorice, and caramel. Taste is coffee, dark fruits, chocolate, toffee and vanilla. I only wish it had a touch more carbonation, but otherwise a fine, soothing stout.

750mL growler filled 3/18/16 and drunk 3/25/16.
Perfect pour as expected; massive tan head tops an ebony body with strong retention. Clarity undetermined.
Rich and bready in the nose, with strong roast, vanilla and treacle suggestions. Very fudgey, especially with warming but the dry, cellar/plaster-like house yeast character helps allay some of this. The coffee is strong but not overbearing and pretty well integrated with the malt character. No alcohol or flaw noted.
In the mouth it’s a bit more difficult to rate. The flavors are certainly rich and well-developed, with tons of chocolate fudge, espresso and vanilla. Coffee is not intensely bitter or heavily roasted and there’s a fair amount of syrupy treacle-meets-marshmallow-meets-chocolate-toffee flavor. Carbonation is low though not particularly so for a stout. No alcohol or flaws with a very malty, somewhat syrupy texture. Though there is some amount of enjoyable ash/char, it could still use some more dryness and I don’t think this is supposed to be a sweet stout, though it would work better as one of those. Nonetheless, quite drinkable and flawless in the flavor category.

Bottle courtesy of Hackobock. Pours viscous black with a rather big creamy dark mocha head that leaves lots of spotty sticky trace on the glass while dissipating. Smell is malty and roasty with roasted malts, caramel, burnt cookies, dark roast coffee, bitter chocolate, dried cherries, dried cranberries, sweet liquorice candy, moist soil and hints of alcohol. Taste is sweet, bitter, heavy malty, roasty and tiny fruity. Mouthfeel is fat, creamy, velvety, round, roasted astringent and near full bodied. Finish is tiny sweet, bitter and extremely rich in the roasty malts and fruity coffee. Lovely full bodied coffee treat.
