Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

*4/17/2013 750ml bottle poured into a Hill Farmstead oversized wine glass. A~ very dark brown, with a tanish head and some nice lacing. S~ whoa! peppery, citrus, really tart, and a little hay funk as well. T~ a nice amount of tartness up front followed by some lemony citrus notes and pepper on the finish. dark roasty malts flow throughout. a little bitter chocolate too! M~ perfectly carbonated, very smooth, just a little thin. if it was thicker this would be some what similar to Funk Metal without the coffee notes. O~ amazing! to say the least... one of the most sour HF’s i’ve had fresh, i can only imagine how this will turn out in a year or two. it might thicken up as well, oh you know i’ll be waiting! get your hands on a bottle if you have the chance!

Garrold (5276) - Sheffield, South Yorkshire, ENGLAND - APR 14, 2017
Bottle. Willy’s Store, Greensboro, VT. Gloopy pour. Dark brown. Super sticky, lasting, beige head. Nose has dark fruit. Some plum and fig. A little woody and ashy. Hint of liquorice. As well, it has that completely distinctive, Hill Farmstead yeasty twang. Taste is lightly sour and balsamic sweet. Dries out significantly. Not keen on the mouthfeel. It’s stringy and gloopy. Balsamic twang to finish. Nice enough, but miles off expectations.

Lots of tangy citrus. Pours brown with lots of head. A little too much lemon for me like a Ford Pinto. Tap at the sovereign.

My Bottom Line:
Starkly citrusy from beginning to end, this tart Saison benefits from a few herbal sprigs and humid earth to render a complex and enjoyable profile.

Further Personal Perceptions:
-A veil of foam skirts the cloudy dark brown.
-Both the nose and flavour profile don’t announce much in the way of roasted barley flavor.
-Acidity levels are medium-high.
-The soft effervescence and acidity combine for some easy drinking (for those used to tartness).


Mortlach (2347) - Rome, ITALY - FEB 12, 2017
On tap @Ma che siete venuti a fà (Rome). Bevuta a Birre Sotto l’Albero 2016. Bruna scura/nerastra, schiuma media e persistente color bianco sporco. Al naso sentori vinosi, note tostate, caffè, pelle, leggero erbaceo, lime. In bocca è spigolosa, dolciastra all’attacco, con note di caffè e vinose, complessa. Corpo medio, carbonazione medio-leggera. Forse un po’ troppo "complicata" e confusionaria.

Backlog, ocena przepisana z untappd, w ramach uzupełniania profilu na ratebeer. HFD #4 Pachnie i smakuje trochę jak jasne piwo. Fajny Brett, lekka paloność wpada w przyprawy i ciasto marchewkowe. Fajne.

Sergey’s hunt; bottled 2015 12 04; 5.8% ABV
Dark brown color, medium head. The aroma has mild note of straws, caramel, and sourness. Smooth mouthfeel, highly carbonated; the darker malts blend well with the vinous sourness. Vinous astringency in the final.
Very good.

Pours a semi-opaque brown with a thin off-white head. Nose is dry funk. Flavour is lovely, some sourness, light pepper, not dry at all.

750ml bottle (thx, Alex M.!) at Alex’s. Bottled on 2015-12-04. Pours a dark brown with a tan head. Aroma is sour, slightly fruity, bretts, some spices. Taste is same with roasted malt notes. Good.

Thanks Jason! Pours super dark cola color with a tan head. The smell is dark roasted malt, spice, yeast. The taste is dark fruit, yeast, spice ending slightly sour, dry and roasty. Light/medium in body with the typical great HF fine carbonation.
