COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

Bottle thanks to northernbrews. Aroma is hard to explain. Mildly sour black cherry and black raspberry, earth, and dark bread. Tastes dry and mildly sour. Black cherry skins and earth. Pretty good but I would want more than a small pour of this.

Bottle: The aroma consists of moderate cola, caramel, spice, and a hint of lemon. It pours a dark brown with orange highlights. It has a small beige head that fades to a minimal film outlined by a thin ring. The flavor starts with chocolate, cola, and caramel. The finish has light-moderate tart lemon and mild roast. It’s light-medium bodied with moderate-lively carbonation.

On tap at WarPigs Brewpub, Hill Farmstead Day.. Low tan-coloured head, spotty lacing to the glassware, near-clear, dark ruby body colour. Attractive black berries and dark malts on the nose. Oak and dark malty sweetness to the flavour character offset by mid-tart black berries and a backdrop of yeasty fruitiness. Tart and sweet ending. Fine bodied. Interesting and enjoying (shared with KimJohansen and Skinnyviking, Copenhagen 12.05.2016).
