COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

[email protected] Brown cola colour. Good farmy funk on nose, old hay, old dark fruits. Med bodied, nicely tart, balanced. Burnt popcorn, dark bread. Real nice.

Pours black with a low white head. Aromas of chocolate, roasted notes, roasted malt, funk, dark red berries. Taste is fruity and floral with a nice roastiness and slight funk. Mouthfeel is medium bodied with medium carbonation.

From notes. Enjoyed this baby at a line share at Witch’s Hat on St. Patty’s Day. 750 mL bottle opened by Gus. The pour is a darker brown, hints of light ruby, with a light tan head that fizzles down to a film, leaving some solid lacing. The aroma is very funky right up front. It’s got a little more of a traditional Belgian farmhouse happening with the banana and a hint of clove, but the roastiness kind of saves it here. There is a little barnyard funk going on, but that’s about it. The flavor is also pretty good. It’s got a nice tartness up front with an excellent roast throughout. The banana and clove are gone, and the flavor is a little enjoyable! The brett funkiness really comes through on the back end. The mouth feel is good. It’s a little heavier than I’d want it to be with a nice crisp carbonation and a lingeringly roasty, funky brett aftertaste. This one is definitely a good beer, and HF does manage to do it well. Visuel : Couleur : noire-brune. Apparence : quasi-opaque.
Arôme : Levures sauvages, fruitées et légèrement épicées, léger malt rôti, notes de fût de chêne, léger herbeux.
Goût : Entrée de bouche : Goût de levures sauvages (brett) et fruité légèrement acide (cerises sûres, notes de raisins) aux notes épicées. Un léger support de malt rôti est également présent avec un léger goût herbeux ainsi qu’un léger goût de fût de chêne vineux.
En bouche : Corps : moyen. Effervescence : moyenne-élevée. Texture : très légèrement crémeuse. Finale : moyenne et un peu sèche, composé d’un léger goût acide de levures fruitées avec des notes amères de rôti et de houblon herbeux.

75cl bottle, thanks Peregrinari. Medium beige head atop brown-black body, nice lacing. Aroma is moderately sweet, some funk/sour, wood, light cherry. Taste is moderately sweet, oak, sour, cherry, some funk, light vinegar. Light-medium body, light stickiness.

Bottle shared with koleminer20, Gus, and others. Aroma is funk, barnyard, slight banana, straw. Appearance is brown, light tan, hazy. Taste is tart, straw, funk, robust, delicious. Mouthfeel is medium body, crisp carbonation, tart bretty aftertaste. Overall, this is quite delicious.
