Edith (1897-1992) was our grandfathers sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

Pours black with a low white head. Aromas of chocolate, roasted notes, roasted malt, funk, dark red berries. Taste is fruity and floral with a nice roastiness and slight funk. Mouthfeel is medium bodied with medium carbonation.

Pours a dark coffee brown with some haze and two fingers crackling beige head that settles into a thin creamy layer. Tart with some dark fruit. Subtle cacao and a bright acidity. Very light and dry.

From notes. Enjoyed this baby at a line share at Witchs Hat on St. Pattys Day. 750 mL bottle opened by Gus. The pour is a darker brown, hints of light ruby, with a light tan head that fizzles down to a film, leaving some solid lacing. The aroma is very funky right up front. Its got a little more of a traditional Belgian farmhouse happening with the banana and a hint of clove, but the roastiness kind of saves it here. There is a little barnyard funk going on, but thats about it. The flavor is also pretty good. Its got a nice tartness up front with an excellent roast throughout. The banana and clove are gone, and the flavor is a little enjoyable! The brett funkiness really comes through on the back end. The mouth feel is good. Its a little heavier than Id want it to be with a nice crisp carbonation and a lingeringly roasty, funky brett aftertaste. This one is definitely a good beer, and HF does manage to do it well. Visuel : Couleur : noire-brune. Apparence : quasi-opaque.
Arme : Levures sauvages, fruites et lgrement pices, lger malt rti, notes de ft de chne, lger herbeux.
Got : Entre de bouche : Got de levures sauvages (brett) et fruit lgrement acide (cerises sres, notes de raisins) aux notes pices. Un lger support de malt rti est galement prsent avec un lger got herbeux ainsi quun lger got de ft de chne vineux.
En bouche : Corps : moyen. Effervescence : moyenne-leve. Texture : trs lgrement crmeuse. Finale : moyenne et un peu sche, compos dun lger got acide de levures fruites avec des notes amres de rti et de houblon herbeux.

75cl bottle, thanks Peregrinari. Medium beige head atop brown-black body, nice lacing. Aroma is moderately sweet, some funk/sour, wood, light cherry. Taste is moderately sweet, oak, sour, cherry, some funk, light vinegar. Light-medium body, light stickiness.

Bottle shared with koleminer20, Gus, and others. Aroma is funk, barnyard, slight banana, straw. Appearance is brown, light tan, hazy. Taste is tart, straw, funk, robust, delicious. Mouthfeel is medium body, crisp carbonation, tart bretty aftertaste. Overall, this is quite delicious.

Weird beer in the canon, as the dark roasty maltiness plays off the tartness in that typically strange way that Im not sure I entirely hate. Its pretty good for a black sour beer, I guess is what Im saying.
