COMMERCIAL DESCRIPTION
Edith (1897-1992) was our grandfathers sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this black saison is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Ingredients: Pale Malt; Roasted Barley; European Hops, Farmhouse yeast, Brettanomyces, and our Well Water.

750ml crown-capped shared with blankboy and GregClow, via JerCraigs. Almost opaque ruby-black pour, huge fluffy lasting tan head - lovely, 4+. Sharply dry aroma, dry floral bitterness, sharp dry yeast, light fruit - very bretty, lightly roasty; nice stuff! Taste - oh man thats good - medium-hoppy (dry resin), light roast, slightly vinegar tartness, enough brett to compete - some alcohol; frickin great stuff. Decent body, astringent, lightly carbonated but quite airy, delicately funky, longish dry floral/brett finish. So good.

On tap @Ma che siete venuti a f (Rome). Bevuta a Birre Sotto lAlbero 2016. Bruna scura/nerastra, schiuma media e persistente color bianco sporco. Al naso sentori vinosi, note tostate, caff, pelle, leggero erbaceo, lime. In bocca spigolosa, dolciastra allattacco, con note di caff e vinose, complessa. Corpo medio, carbonazione medio-leggera. Forse un po troppo "complicata" e confusionaria.

Backlog, ocena przepisana z untappd, w ramach uzupełniania profilu na ratebeer. HFD #4 Pachnie i smakuje trochę jak jasne piwo. Fajny Brett, lekka paloność wpada w przyprawy i ciasto marchewkowe. Fajne.

Dark brown color, medium head. The aroma has mild note of straws, caramel, and sourness. Smooth mouthfeel, highly carbonated; the darker malts blend well with the vinous sourness. Vinous astringency in the final.
Very good.

Pours a semi-opaque brown with a thin off-white head. Nose is dry funk. Flavour is lovely, some sourness, light pepper, not dry at all.

750ml bottle (thx, Alex M.!) at Alexs. Bottled on 2015-12-04. Pours a dark brown with a tan head. Aroma is sour, slightly fruity, bretts, some spices. Taste is same with roasted malt notes. Good.

Thanks Jason! Pours super dark cola color with a tan head. The smell is dark roasted malt, spice, yeast. The taste is dark fruit, yeast, spice ending slightly sour, dry and roasty. Light/medium in body with the typical great HF fine carbonation.

Tap at Ma Che Siete Venuti a F in Rome-Italy with Mortlach. Black pour, creamy and resistant ivory foam. Nose: roast is quite nice, orange chocolate, floral. Mouth: frizzy, peppery, champagne fine with a pinch of lime and a bitter/tart aftertaste which remains. No roast in the taste, much joy tough ;)

Une bire noire aux reflets bruns, avec une fort belle carbonatation digne des plus belles stouts. Au nez, ca me semble assez houblonn, avec un petit ct rsineux quon sent bien, et curieusement, elle me fait un peu penser dautres bires sres en armes, ce qui est dfinitivement intressant. Au got, cette bire me fait dfinitivement plus penser une saison surette qu une saison noire. Le got de la levure de saison la Hill Farmstead est bien prsent, avec une prsence sure non pas omniprsente, mais bien ressentie. Bien que la bire soit noire, on ne peroit pas le malt torrfi. Au fil des gorges, on peroit de plus en plus la levure de saison, bien sucre et sche. Surprenante.

One of Hill Farmsteads flagship farmhouse ales, the dark one in this case, at Hopishop. Thickly papery lacing, snow white, moussy head, very dark chestnut brown robe with mahogany hue, hazy - obviously much darker than the average present-day saison, though Id like to point at Silly Saison to draw attention to the fact that a traditional farmhouse ale should not necessarily be blonde. Aroma of roses, caramel, maracuja yoghurt, blackcurrant, strawberry, moldy hazelnut shells, toasted bread, pear, red wine vinegar, damp hay. Crisp, fruity onset, tart hints of redcurrant, passion fruit and blackberries, light fig-like sweetness as well, sherry vinegar-like sourishness grows in the course of the palate and effectuates a drying effect, smooth mouthfeel, caramelly and lightly toasty malt core, earthy finish with lingering fruit esters and some balancing herbal hop bitterishness. As said, dark saisons are less a stretch of the style as they may seem at first sight - also considering the fact that saison was never a well-defined beer category simply since it long predates the need to categorize beer styles. This one is - of only very few attempts at the concept of dark saison I had so far - the most interesting one in that respect for me, combining the typical nutty and toasted darker malt properties with the funkiness, ruralness and esteriness of a saison. I also like the soft, fluffy mouthfeel which seems to recur in all of Hill Farmsteads saison-like ales.

At Hopishop 2016. Aroma of tart, brett and red fruit. Taste has soft yeast, mild funk and some fruit. Bit boring, just solid.
